Prune muffins

Ingredients

Wheat flour 250 g
Kefir 150 ml
Oat flakes 75 g
Brown sugar 220 g
Rast. oil 130 ml
Baking powder 2 tsp
Cinnamon 1 tsp
Vanilla sugar
Egg 2 pcs.
Sweet and soft pitted prunes
(finely chopped)
250 g
Chopped nuts (pecans or almonds) 120 g
Sour cream (yogurt)
for eating the finished product

Cooking method

  • Pour butter into kefir, add sugar, eggs, vanilla sugar, cinnamon (I never put it, I don't like cinnamon), baking powder and beat with a whisk. Then add flour, mix again, then nuts, oatmeal, chopped prunes and mix without fanaticism.
  • Be sure to take brown sugar. It gives a specific caramel note and the smell from the dough comes from fresh apples and apple pie.

The dish is designed for

15-16 small cupcakes

Time for preparing:

20-25 minutes

Cooking program:

We lay out in molds and in the oven at 180 degrees.

Note

I only realized by nightfall that my prune quirk had begun. I made chicken fillet with prunes, muffins with prunes and also prune ice cream. This is a diagnosis, comrades.

Actually, I love prunes. I eat a lot of it just with a bite of tea. Probably because my stomach has a wonderful friendship with him, as well as with dried apricots. Without terrible, terrible consequences.

I remember that I was in my second year of university and bought a weighty pack of a mixture of prunes and dried apricots. We ate all this wealth at the lectures. Naturally, everyone around, who could reach and get to him, was prying and begging, so that he would be poured out for him. In general, the next two lectures were practically disrupted. The teacher looked sideways and angry when every five minutes someone asked to go to the toilet. I was almost beaten. And not because I was the "instigator", but for the fact that at least I had henna, although I ate the most.

So. I don’t remember where I got this recipe, and even altered it, if someone suddenly admits, signal it.

Warm ones with sour cream (or yogurt) are the most delicious.

I'm putting in quick-cooking cereals. Well, that 3 minutes to cook.
Rusya
An interesting recipe! I love prunes, it's a pity my kids don't like it. But we will teach.
I have a question: Does the dough grow a lot when baking? How many molds should I put 1/2 or 3/4 in?
Scarecrow, and you like stuffed cabbage rolls with prunes, and borscht with prunes? I love him everywhere.
Scarecrow
Oh, cabbage rolls with prunes have never been encountered in my life, but borscht was the case.

The dough grows a little, it is heavy, so I put the molds 3/4 way.
Omela
Here's my one, but a sooo big muffin !! It was lazy to lay out the molds. Still hot !!! I did everything according to the recipe, only instead of baking powder 1 hour. l. with a slide of soda, extinguished in kefir and left for 5 minutes and did not put the nuts. After kneading before baking, on the advice of Mila007, I let the dough stand for 20 minutes. The dough has doubled.

But I understand / love prunes only in their pure form, I especially love "Champion" ! And for the family I often cook it with meat, I always add it to bigos, oh yes, there are many places ...Scarecrow, thanks for the cupcakes, I take the recipe with me in the hope that in the near future I will still cook them ...

I know this prune, the Champion. I also take such raisins - clean, straight into baking. The beauty.

And about "taking away the recipe" - I strongly doubt it. I already have eyes in different directions with this forum, there are so many things and everything must be tried. Today I came across your spicy jelly and remembered that I was going to make it. I will forget again tomorrow !! So the currants will end completely, the trees are green.

Omela

Have you tried it with yogurt ?! With natural, without fillers - delicious-ah-ah!

I sat, could not understand why the cupcake on top in the photo is in flour! Then it came - powdered sugar!

In the original recipe, 2 tsp. baking powder and 1 tsp. soda. Together. I've read for a long time that there is some sense in this, but I can't remember which one. But I don't like soda, I excluded it. Maybe in vain? You need to try with soda.
Omela
It never came to yogurt! And where can I get it at 12 at night. And I don't like baking powder. And here soda is extinguished with kefir (kefir is bubbling, bubbling), so it seems to me that there is no aftertaste either. And with powder I masked irregularities from the shape!
Sonadora
Scarecrow, I want to cook with cocoa (30 grams) and without oatmeal (I don't want to buy a whole pack, no one eats them at home). So I think, 40 grams of flour should be added or not?
Scarecrow
In my opinion, 75 grams of oatmeal is pretty decent, so you should add a little flour, the flakes are still hygroscopic.
Sonadora
Scarecrow, thank you very much! Very tasty cupcakes turned out, I report:

I baked according to your recipe, with oatmeal, only without nuts (I forgot to buy, and run to the store a second time in this heat ... replace with a firing squad). I put one spoonful of baking powder in the dough, one spoonful of baking soda. Fit very well.
I also slightly changed the order of the "bookmark" products.
I mixed flour, baking soda, baking powder and oatmeal. Beat eggs in a separate container, gradually adding sugar. Then she poured in half of the flour mixture, poured in kefir, the rest of the flour mixture, kneading well each time, and added oil, kneaded again. So I'm somehow more familiar.

The baking powder consists of soda and acid, and the proportion of them is selected so that the reaction in the dough proceeds without residue. Therefore, if the dough contains an acidic ingredient (kefir, sour cream, zest, citrus juice, etc.), we add soda. (A. Seleznev)

And really great. The pulp is porous. Maybe it's good that the nuts were forgotten. They soften the dough, so it rose perfectly.

I have one big muffin. Delicious, flavorful Thank you!

Natasha, but for teapots - the better to replace vegetable oil?))) (For me vegetable = sunflower)
I only have cream and olive in my house, for salads and for frying. Salad will probably disappear because of the taste. I am tormented by a choice ... I thought in the evening or tomorrow morning to portray muffins for men for breakfast, but not to go to the store on Friday night, eh?

It's probably too late, but we'll replace the vegetable with cream))).
marina-asti
No, no, it's not late at all, just entered home, or I'll do it later or tomorrow morning. I'll tell you!

I report)
In general, I liked it, it ended relatively quickly, the only thing that seemed to me the dough was thick, but this is probably my joint, since there was whole grain flour, it could require more liquid, plus I flooded the butter, but the bulldozer, poured it into the kefir from refrigerator, it's still impossible to call it a liquid))), plus I was distracted by meeting guests, overexposed for 3 minutes in the oven.
I really liked the oat flakes a little "biting" inside, a very interesting combination of hard pieces of nuts and soft prunes as opposed to them. The repeat will be unambiguous!

This kind of analysis is our way, Brazilian!

The flour could be quite dry. The moisture content of flour can be so different that ah. Either you have to mix almost 100g, then you put it in at the rate - thickly. Butter, by the way, yes, you're right, if not ghee like water, then it thickens the dough, this must be borne in mind. And how did you measure the oil? 130 GR or melted in ML?

Such messy fun turned out))).

CHE! We don’t give up on difficulties at all! I measured butter on a scale in grams))) it melted in MV, but when combined with cold kefir, it naturally became not very liquid)))
Well, it’s her own fault, because at night I was too lazy to do it, but I did it already in a crazy house, at the same time pulling the crawling baby out of the dog's bowl, then somewhere else, while giving valuable instructions to the other three "bandits" (5, 4 and 2 years old))))

At the expense of the disheveled ones - yeah, because because of the thick dough, their shape has not changed much, plus all the same, nafig need to abandon paper molds and look for silicone ones in the bowels of the cabinet, or buy a metal mold and put paper ones in it.

My coffee machine turned on today (1 year 8 months). She put a mug, pressed Start, everything was chin-chin and waited for the divine drink to be poured into the mug. so I'm in the subject!)))

I'm wondering if the grams of butter (butter) correspond to the volume or not? That is, 130 grams of melted butter is 130 ml? It seems to me less. Because the vegetable is measured by volume.

Mom's lovely))) well, at least he doesn't drink coffee yet)))

I think that not a fig gr of butter will not correspond to ml, the density of even melted butter is more than vegetable. But according to the sensations of the dough, I think it would be possible to add kefir, and if you take kefir not 2.5% as I had, but standard 3.2 or even 4%, then you can try to reduce the amount of oil and slightly increase kefir ... Next time I will definitely experiment - I really liked the taste of the dough! Mine are asked to do with nuts and chocolate, I just have chocolate drops! I'll do it - I'll tell you!
marina-asti
: elka: There was take 2! I'm starting to think that I and muffins are not very compatible concepts, which means that take 2 was not bad either. Those I still overexposed a little, these were excellent, soft. But again, the initial recipe was slightly redrawn))) I spent the nuts on the Ren cupcake, therefore, at the request of the workers, 1.5 packs of chocolate drops for baking were added to 250 g of prunes. And of course, my hand didn’t rise up to pour so much butter, so the amount of vegetable oil was partially replaced with butter, some with kefir .... I was sweet, but my husband loves sweets! The main thing is that prunes are unchanged - tasty no matter what! I love prunes!

Now you're going to laugh, but the dough was not thin now?))) The tops did not rise, so the consistency of the dough did not give.

but I won't laugh, that's why I said that I and muffins are apparently not very compatible. I’m a teapot in baking, in fact, by the type of dough it’s not really possible to determine what’s missing there .... I had tall, beautiful fish snack bars and then only once .... but this is all because I’m a bastard))) and I admit it!

Made muffins according to this recipe. This is sooooo delicious! Especially the grandson checked out ... Thank you, Natasha!
