Cheesecakes Polotsk

Ingredients

homemade cottage cheese 400gr.
raisins 100gr.
flour 100gr.
eggs 1 PC.
sugar 50g.
vegetable oil
For sour cream-poppy filling:
sour cream 500gr.
poppy 3st. l.
sugar 100gr.
butter 50g.
vanillin

Cooking method

  • We combine cottage cheese, sugar, pre-steamed and washed raisins, egg and flour. We knead everything well. Flour can take more, maybe less, it all depends on the moisture content of the curd. Focus on the density of the dough. The dough should not be tight and hard, it remains slightly sticky.
  • If there is too much flour, then our cheesecakes will turn out to be tough, which will significantly spoil their taste.
  • When the dough is ready, we start making our cheesecakes. We need to roll up small balls (1.5-2 cm in diameter) and roll them in flour. Since the dough is sticky, it is convenient to do it with a teaspoon. Take a spoonful of dough, dip it in flour, and roll it in flour, you can easily make a ball out of it. We put our balls on a floured board and send them to the freezer for at least three hours.
  • While the cheesecakes are freezing, let's do the poppy filling
  • Pour the poppy with boiling water and cover with a lid, let it stand for 15 minutes, steam.
  • Melt the butter, add sugar, vanilla sugar, sour cream, poppy seeds. Mix well. We put on a small fire, heat the sauce, but do not bring it to a boil.
  • Fry frozen cheese cakes in vegetable oil until golden brown. Put the cheesecakes in a pot and pour over the sour cream-poppy sauce. Put in an oven preheated to 180 degrees for 15-20 minutes. Do not overdo it.
  • Serve hot. Eat with pleasure.
  • Cheesecakes can be kept in the freezer as a semi-finished product and used as needed.
  • Taxi drivers often come to visit us. And when I ask what to cook, cheesecakes are called first of all. And it is very convenient for me to cook them. Prepared in advance, frozen. And when they arrive, all that remains is to pour the sauce into the oven and ... everything is ready!

Yesterday I made a hybrid of your syrniki. It was lazy to fry in a frying pan, but still heat the oven, so it turned out not an exact recipe, but an improvisation on the topic. Spread the cheese pan into the muffin tins with a spoon and put it in the oven. When baked, put it in a frying pan, poured sauce and again in the oven.
The impression is incomprehensible. Maybe because my poppy was not in its pure form, but a ready-made poppy filling for pies. There, besides the poppy, something else was added and the sauce turned out to be thick. The son was eating, but said that it would have been better without the poppy. I'm somehow not very hot when I'm hot, but I really liked it from the refrigerator this morning. Thanks for the recipe.

When baked, put it in a frying pan, poured sauce and again in the oven.
At this moment the sauce thickened very much. But in fact, the sauce should be 15% sour cream. Therefore, in order to avoid thickening of the sauce, I wrote in the recipe:
Put the cheesecakes in a pot and pour over the sour cream-poppy sauce. Put in an oven preheated to 180 degrees for 15-20 minutes. Do not overdo it.

well, if you consider what you cooked in a pan, then the time should be significantly reduced.

A very interesting version of cheese cakes! And the idea of freezing! I will definitely try and report back! Have you tried baking in a slow cooker instead of a pot?

Do you believe? I didn't even think of it. I wrote here that I use cartoons in a very targeted manner: I cook porridge, but here I learned to cook vegetables in pilaf mode. All. And we should also try the cheese cakes.
Thanks for the idea! Especially in such an incessant heat of hell!

Thank you so much for the recipe. I love cheesecakes, but with them the eternal problem is high-quality cottage cheese. Yesterday I kneaded the dough for cheesecakes, fried it for testing, I didn't really like it, I froze the rest. And I remembered your recipe. I mixed the ready-made poppy filling with sour cream and milk and poured it over. Sooooo delicious.
