Pie Plum-poppy ring

Ingredients

My changes are in brackets.
Flour 375 grams
Yeast (fresh) 21 grams
Egg yolks 4 pcs (2 eggs)
Butter 100 grams (margarine
A pinch of salt
1/2 lemon juice (not put)
Sugar 70 grams = 40 grams for the dough + 30 for the filling. (90 grams = 45 grams in the dough + 45 grams in the filling)
Milk at room temperature 255 ml (100 ml for filling, 155 ml for dough)
Marzipan mass 50 grams (did not put)
Ground poppy seeds 75 grams (100 grams)
Starch 1 teaspoon
1/4 teaspoon cinnamon (1 bag of vanilla sugar)
Plum 750 grams (turn)
Quince jam, slightly warmed up 3 table. spoons (orange syrup)

Cooking method

  • Sift flour into a deep bowl, make a depression in the center.
  • Crumble the yeast into this depression. Pour a teaspoon of sugar on the yeast, pour 5 tablespoons of milk at room temperature. Pour a couple of teaspoons of flour into the same depression and mix everything that is in the depression slightly.
  • Cover the bowl with a damp towel and put in a warm place for 15 minutes. The mass in the depression should grow strongly and bubble.
  • Heat milk (100 ml) over low heat, do not bring to a boil, cut the butter into small pieces and dissolve in milk.
  • Add 3 egg yolks, milk-butter mixture, 40 grams of sugar, salt, lemon juice to a bowl of flour and yeast mixture. Knead a smooth dough, well away from the dishes and hands.
  • Cover with a damp towel again and put in a warm place for 45-50 minutes.
  • (I kneaded everything in a bread maker. Dough mode 2-20h).
  • Boil 100 ml of milk with a pinch of salt. Add poppy seeds, bring to a boil and remove immediately from heat.
  • Knead marzipan with 30 grams of sugar. Tear or cut the marzipan mass into small flakes and stir into the milk-poppy mixture.
  • Dilute the starch with a little water, just until smooth.
  • Add the diluted starch to the mass, boil, remove from heat and let cool.
  • Stir in egg yolk and cinnamon. (I did not mix the yolk; instead of cinnamon, I added vanilla sugar).
  • Preheat oven to 200 degrees Celsius.
  • Roll out the risen dough into a rectangle 30 cm x 40 cm. Cut along the longer side into 3 strips of equal width.
  • Spread the poppy seed evenly in the middle of each strip. Grease the edges of the strips with milk and close over the poppy strip.
  • Stretch each of the resulting rolls slightly in length with your hands and place in a pre-oiled tart mold in a spiral shape one after the other, from outside to inside.
  • Rinse the plum, dry it, cut it in half and remove the seeds. If the plums are large, then quarter them. Insert plum halves (quarters) between the turns of the dough spiral, not lying down, but "standing". Grease the dough loops with milk on top.
  • Bake for 50-55 minutes.
  • Remove the finished pie from the oven and brush with warmed quince jam.
