Georgian squash caviar in a multicooker Panasonic SR-TMH 18

Ingredients

Medium squash or zucchini 4 things.
Large onion 3 pcs.
Carrot 1 PC.
Garlic 2 tooth.
Cilantro, dill 1 bundle
Hmeli-suneli 1/2 tsp
Grape vinegar 1 tbsp. l.
Vegetable oil
Salt, red pepper, paprika taste

Cooking method

  • Maybe not very Georgian, but a girl from Kutaisi once gave me the recipe.
  • The result is a very aromatic and juicy caviar.
  • Immediately incl. BAKE for 60 min.
  • Finely chop the onion, coarsely grate the carrots and fry in baking until slightly golden brown in a little oil.
  • While the onions and carrots are fried, peel the zucchini, cut into cubes about 1 * 1 cm and lightly add salt to let the juice start (be careful not to oversalt!), after 20 minutes (during this time the onions and carrots will be fried), slightly squeeze the zucchini and put in the MV. I do this so that there is less liquid for evaporation, to reduce the cooking time.
  • Stir occasionally for even browning. When the zucchini is soft, add finely chopped herbs, garlic, suneli hops, pepper, vinegar.
  • Taste for salt. Salting may not be necessary. If you don't have enough acid, add a little more vinegar. Hold for 5 minutes and that's it - the caviar is ready. My caviar was ready in 50 minutes.

  • It will be very tasty if you add half a glass of ground walnuts to this caviar at the stage of adding greens.

Note

This caviar can also be cooked on the stove (I did this before), just try to use as little oil as possible so that it is not very "oily".
You can make a sandwich with such caviar, eat it as a side dish or side dish.
