Cooking method

  • Make a brew. Pour water, yeast and flour into a bucket of HP. Knead and turn off. Let rise for 1.5 hours.
  • Then add the rest of the ingredients, leaving the olives. Knead again. Add olives at the signal or in the dispenser. Let rise for 1.5 hours.
  • Then form small balls (about 70 g) on ​​a floured surface and place on a baking sheet (I put it on a silicone sheet).
  • Brush with olive oil. Bake in an oven preheated to 180 g for about 20-25 minutes. until golden brown. Remove the bread from the baking sheet and let cool on the wire rack.
  • My comments:
  • Before pouring olives into the dough, you need to let the liquid drain well and dry them with a napkin. But if they are still wet, it is better to lightly grind with flour.
