Soft sweet buns with dried fruit

Ingredients

Test composition:
Flour 300 g
Water 130 ml
Salt 0.25 tsp
Sugar 2 tbsp. l.
(more is possible)
Fresh yeast 15 g
Mayonnaise 50 g
Grated apple 40 g
Filling:
Grated apple 150 g
Starch 1 tsp
Sugar 1 tbsp. l.
Dates 10 pieces.
Dried apricots 5 pieces.

Cooking method

  • Place all the ingredients for the dough in the bucket of the bread machine. Mode "Dough" (I have it: 30 minutes kneading, and 1 hour proofing). When the mode is over, gently knead the dough with your hands (right in the bucket), and leave for another 30-40 minutes.

  • At this time, we are preparing the filling:

  • Grate the apple and mix with starch and sugar. Free the dates and cut them into 4 pieces. Pour dried apricots with boiling water, then drain the water, and dry the dried apricots with a towel and cut.

  • Forming buns:

  • Remove the dough from the bucket and divide into 8 parts. Roll each part into an oval (I do it with my hands). Then spread with apple filling and sprinkle with dried fruits. Roll up rolls.

  • Grease a baking sheet with butter, put rolls on it. Leave for proofing for 30-40 minutes. Then bake in the oven for 30 minutes. 5 minutes before cooking grease the buns with very sweet water.

  • Everything can be simplified. For example, at the signal of the bread machine, add dried fruits, and then form round buns. In general, as you like.

Note

One of my favorite dough recipes. The softest products made from it do not stale for a long time. Based on this recipe, a delicious bread is obtained.
Bon Appetit

PS: I rolled the bun that is in the crack in the photo especially for myself, very thinly rolled out.

Tell me how to measure 15g of yeast at least approximately
Crochet
Kitti ,
Just divide the weight of your pack of yeast by 15, the resulting figure will be the part that you need to make the dough. If it's a 100-gram pack, then about a seventh of the pack ...
Kitti
Crochet , Well, thank you! And they must first be dissolved or something else, I haven't done anything yet, but finding dry ones has become a problem
Crochet
Kitti ,
And on the contrary, I deal only with dry yeast, since you will not find alive with us during the day with fire, therefore I can only recommend you to read this Temka, there you will certainly find the answer to your question:

Crochet , thank you for saving my Temka. There were some difficulties with the internet.

Kitti, if you have any questions about fresh yeast - write, I will be happy to answer.

I baked buns with dry yeast, put 1.5 tsp.
The buns are just super, I didn't even have time to take a picture: a neighbor came in and took away 3 out of 8.
Next time I'll do a double. Instead of dates and dried apricots, the filling is filled with paradise apples and dried bananas.
Delicious! Thanks a lot for the recipe.

kt1889 , you are welcome !
I sometimes put less sugar in the dough, and I bake these buns without filling, but I just sprinkle with poppy seeds or sesame seeds. It is very good to make sandwiches from such buns.
You can immediately put unsweetened filling, for example, cheese.

The recipe is great !!! I made a double portion at once. The filling was made from apple, dried apricots and prunes. I'm not very much for dates. True, instead of mayonnaise, I go there 2 eggs and 50 g of margarine (this is for my double). True, I smeared them with an egg and sprinkled with sesame seeds. It hurts, my child respects such a dressing. But next time I'll try sugar syrup according to your version.

I baked it yesterday. It turned out to be bland. I think we really need to put more sugar in the dough. And another question about "very sweet water" 5 minutes before the end of baking. How sweet? In the author's photo, there is quite a sugar cap on the buns.

I made a double portion at once, and increased the sugar (I love sweets)

I made a little water, about 100 ml and spoons of 5-6 teaspoons (or even more) of sugar so that it did not dissolve all in water, I did the first and only water on the last, I sprinkled it on top, although I had to Add sugar to the water so that it does not fall from the buns.
