Lithuanian bread (by BoraBor)

Ingredients

Dark beer 150 ml
(by the way,
Water 120 ml
Table salt 1.5 tsp.
Sugar 1 tbsp. l.
Honey 1 tsp
Egg (I think you can do without it) 1 PC.
Rast. oils from gr. nuts 1 tbsp. l.
Dry yeast 2 tsp
(my yeast is not very good, so you can put less good yeast)
Flour - rye: wheat (extra, high grade) 50:50

Cooking method

  • Let's call it "Lithuanian". It was based on the 2nd program Moulinex OW 3000, weight - 1 kg, medium crust.
  • But how much flour - I don't know. About a pound. I cheekily turn on the stove, open the lid and (carefully so as not to sprinkle it on the heaters) add sifted flour, just enough to make a beautiful "bun". Anyway, put
  • After the beep, I added our measuring glass of a mixture of prunes, dried apricots, raisins, sunflower seeds., Gr. nuts. Now I think I should have added even more - 1.5 glasses!
  • Since I was about to add the mixture, I "left a little space" - did not report the flour. Now I see that in vain, the bread rose, but the top did not grow - it turned out to be a brick.

Note

BoraBor's recipe moved from the Mastering Moulinex theme.
It tastes delicious bread! As I love, dark, plump, sour, sweet. It doesn't smell like beer!

Allow questions? What does the second program Moulinex OW 3000 mean and what is the volume of your glass? And why did the bread become sour, like all products are sweet?

Program 2 (3h30min) is just for rye bread, and a glass of 300 ml.
Bora Bora
Wow! Didn't know the recipe was brought here!
Pleasantly!

Larissa wrote correctly,
Program 2 (3h30min) is just for rye bread, and a glass of 300 ml.

And sour it comes from a mixture of rye flour and beer, from additives: prunes are a little sour and from the fact that I did not have sourdough.

By the way! This bread tastes best with ... COFFEE! Try it!

And here sweetie it turns out when ALL water is replaced with dark beer, remove the egg (and without it it is delicious) and increase the amount of honey. And do not add nuts, prunes, etc., but add a little cumin. Here.

Yes, I increased the amount of sugar by accident: I just tasted the dough during kneading and it seemed to me that it tasted bitter. I got scared and thumped a couple more st. tablespoons of sugar. And you guessed it! The bread turned out to be sweetish, but ... some kind of original, or something. In general, according to the first recipe I baked 3 loaves (I can't live without it!), According to the second already 2. I will bake for that and for the other, just the thirst for experimentation does not allow baking according to exactly the same recipes!

Oh! Completely forgot! This is, in fact, what should be obtained according to the recipe of "Lithuanian" bread.

In Moulinex OW 3000, the 2nd program is French bread, and the 3rd whole grain rye bread.
Bora Bora
Lyudmila,
thanks for the clarification.
I divide the programs by components, as I like, not paying much attention to the name of the programs themselves:
1st: for experiments with different flours (eg buckwheat), as well as simple bread for the husband (for soup and sandwiches) and bread with milk.
2nd: bread made from wheat and rye flour. By the way, it seems it is also called "village bread". It has a crispy crust.
3rd: only whole or only rye, when I have already kneaded the dough on the 7th program, and I give the dough an additional rise with heating.
4th: if butter is included, then I bake on the "brioche" program.
5th: quick bread ... don't know, haven't tried

Quoting Larissa, I basically agreed that the program is 3 hours 30 minutes and that the glass is 300 ml. I'll come home and clarify. In general, it would be nice to paint programs for different stoves in a separate Temka. Let's think it over, suggest ...

General merci!

Here, I'll insert a couple of photos of "Lithuanian" here.

In this I replaced all the flour with rye.
I baked it without an egg and, like, added half a spoonful of yeast.
After the 3rd batch, I thought that it would not work at all, since that lump of "cement" did not look very presentable.
She pulled it out and thrashed it with her hands. I put it back, taking out the blade. Moistened with water on top. I left it on heating after the main program for almost 40 minutes.
The result was eaten in 4 days

In this case, I practically followed the recipe (only without the egg) and added sourdough (I now put it everywhere). And finally, I counted the amount of flour ... True in glasses

200 ml. dark beer
50 ml. water
1.5 tsp salt
1 tbsp. l sugar
1 tbsp. l honey
1 tbsp. l rast. oils (took from walnuts)
1.5 tsp yeast
4 tbsp. l. starter culture (instead of it you can take +20 ml. water)
Mixed flour in a bowl: 400 ml. rye and 400 ml. wheat. And poured 600 ml of the mixture into the HP.

In the process of mixing, I added another 40 ml. a mixture of flour and 400 ml (2 measuring cups of 200 ml., without a slide) of dried fruits: dried apricots, cut in half, whole prunes, sunflower seeds, pine nuts, walnuts, it would be nice to have raisins, but it was not there.)

Here is the result.
I also eat ...

girls! and boys!

I baked such a piece of bread - awesome, I tell you! for tea - just super - quite dietary and very healthy!
I didn't have time to take a picture - by my arrival there was only a crust of him, but so delicious!

advice to Panas owners - knead the dried fruits by hand or add at the very end - the prunes grind completely even if you put a whole%)
Ludmila
That's for sure! The bread is delicious! so far the fastest eaten in our country - for tea, like a cupcake.

I was looking for a recipe for Lithuanian bread for my Lithuanian husband, with the secret idea of seducing him with a bread maker, and he says what the bread maker is for, I'll mix it for you and bake it in a cartoon, half baked in the oven, and half in a cartoon, burned a little in the oven, but both the loaves rose and turned out to be delicious

I took a dark beer Goat. There are only 3.2 turns, well, I liked the taste. But I didn't like the bread at all, something really happened, it turned out so that I cooked it at half past three in the night))) I kneaded the bun and set everything, and in the morning I woke up and saw that I did not press the squeak button Well, I pressed it during the batch I poured a little shivering ... But it still turned out badly And I didn't like the taste, and gives it away with beer ... I don't know ... This is the first bread with which I was not lucky

I apologize for the slowness, but what about 50/50? kg, liters, cans, buckets, glasses? ........ here something was written about 400 and 400 ml, plus some other mixture, plus more was added ........... in general it is not clear, the weight of flour can be more specific
Admin

Based on the amount of liquid indicated by the author in the recipe, and her commentary - you need about 500 grams of flour, 250 wheat and 250 rye.

And since even eggs are small and large (which you personally take in terms of weight and volume), you will adjust the difference in the dough liquid with an additional portion of flour - flour / liquid balance, bun

I found and tested this version of the "Lithuanian" bread recipe:
Products in the order in which they should be put into the bucket of the bread machine:

3. Honey 1 tsp. (or 0.5 tbsp. l. sugar) used 1 hour. l. apricot-ch. currant jam;
4. Rye flour 250g (400 ml)
5. Wheat flour 250g (400 ml)
6. Egg 1 pc.
7. Beer 200 ml (the darker the better)
8. Kefir 100 ml
9. Vegetable oil 2 tbsp. l.
