Rice with squid

Ingredients

Chopped onion 1 PC.
70 g
Chopped garlic 1 clove
Rice (long grained) 1 tbsp.
(250 ml)
Olive (or vegetable) oil 20 g
Squid (rings) 400 g
Parsley 20 g
Bell pepper 1/2 pcs.
100 g
Water 2 tbsp.
(250 ml)
Salt, pepper, spices taste

Cooking method

  • In a saucepan, preferably non-stick or thick-walled, lightly fry the onions, garlic, bell peppers in strips in heated oil, add rice and fry for another 2 minutes, stirring occasionally. Add prepared already peeled calamari rings and fry, stirring for another 3 minutes. Add chopped parsley, water, salt, ground pepper and spices. Let it boil and cook under a closed lid for about 6-7 minutes. Then turn it off and leave it on the stove without opening the lid for 10-15 minutes.

I needed one Portuguese recipe and I asked my colleague to bring it to me. She brought me a whole book of Portuguese recipes. Without losing the opportunity, I decided to rewrite the recipes from there. I wanted to pay you back with the same coin and please you with some Portuguese recipes. As I have free time I will cook something of them. Hope you like it. I don't like complicated recipes. And everything that is inexpensive, easy and desirable to quickly prepare - that's for me!

My comments:

Only here I learned how to cook rice. And that's how the Portuguese brew it. Cook for 6 minutes, then turn it off and let it steam under the lid. And be sure to fry before cooking! So it won't turn into mush!
Delicious! Not high in calories!

I got soft. And you don't need to cut them very thinly, better with medium rings.
