I cut vegetables into pieces of the right size, washed from starch and well remove excess water, otherwise the potatoes will be slippery when cooking.

Vinaigrette is the same salad, only with a predominance of beets, carrots, sauerkraut, pickles.
Add chopped herring to the vinaigrette. Why then not change the ratio of all components inside and instead of salted herring add steamed fish. Only preferably the fish is not greasy, otherwise it will fall apart and smear all the vegetables. Or you can put on a plate next to a large portioned piece.
And why should not be put in the vinaigrette, for example, steamed meat. If it tastes good and does not spoil the salad, it is important to put the food in so that they combine and do not spoil the taste of the dish.
It already depends on your preferences and your taste.

Unfortunately, I cannot give advice "instead of what and how it will be combined" in vinaigrette and pickles.
Try to make a small sample to sample, adjust the amount of food and pickles. Maybe put very little of them just for the "smell", or maybe completely remove, it's up to you.
I very often change recipes in the course of their preparation - I put the food in, taste it, look like it or not, what else to add, etc.
