Cooking method

Salt and pepper the meat and add spices, then squeeze the lemon, cover with a lid and refrigerate for a day. You can keep it warm for 4 hours. Then I wrap the meat with the released juice in a baking sleeve and put it in the oven for 2.5 hours at t 180-200 degrees. When ready, I cut against the fibers and the meat breaks down into smaller pieces. The husband squeaks with delight!
And now I got the hang of doing not in the sleeve, but in a saucepan in which you can cook without water and fat, it is very convenient.

I am cooking something similar, but with a slightly different recipe. I cut the meat and insert pieces of garlic there. Then I soak it in spicy adjika. For a day in the refrigerator. I don't add salt and pepper (because everything is in adjika and that's enough). And then everything is the same. If you are sure that the meat is young (veal), then it is possible in foil. I like it better.

From spices I sometimes take "for frying meat", a matter of taste. And my husband, again, does not eat garlic and I myself have not tried it, although I love garlic. And as for the foil, I tried it, it turns out juicier in the sleeve.

It turns out very tasty with garlic.
I take the beef, sprinkle with salt, a mixture of pepper, put it in a roasting sleeve, add a few leaves of bay leaves and a finely chopped clove or two garlic - sprinkle on top.
