Curd pies Puzanchiki

Ingredients

flour 300 g
baking powder 2 h l
sugar 75 g
vanilla sugar 1 sachet
salt pinch
cottage cheese 125 g
milk 100 ml
vegetable oil 100 ml
filling - option 1 (from the author)
banana 3 pcs
apricot jam 2 dessert l
lemon juice 2 dessert l
filling - option 2 (my)
apples 400 g
raisins 50 g
cinnamon 0.5 h l
semolina 1 tbsp
lemon juice 1 lemon slice 0.5 cm thick
for lubrication
egg 1
for sprinkling
almond petals or sugar

Cooking method

  • Mix flour with baking powder, add the rest of the ingredients and knead the dough. Knead for a short time, otherwise the dough will be sticky!
  • Under the banana filling
  • Roll out the dough into a 36x36 cm square and cut into 9 12x12 cm squares.
  • Cut each banana into 3 equal parts.
  • Mix the jam with lemon juice and grease the squares with this mixture, stepping back 1-1.5 cm from the edge.
  • Arrange the banana slices diagonally and brush the bananas on top with the lemon jelly mixture.
  • Fold the patties into a triangle and pinch the edges.
  • Apple filling
  • Peel the apples, remove the core, grate on a coarse grater, add lemon juice, cinnamon, semolina, mix thoroughly, add raisins, mix.
  • Form a roll from the dough, cut into 10 pieces. Knead each part with your hands in a circle of Ø 10 cm. Put the filling on the blank, fold the dough in half, press the edges.
  • Place the patties on a baking sheet lined with baking paper.
  • Brush with beaten egg and sprinkle with almond flakes or sugar (I sprinkled with brown sugar).
  • Bake in an oven preheated to 180 ° (convection 160 °) for about 15-20 minutes until golden brown.
  • I used to bake pies with apple filling. The filling turned out to be delicious - not mashed potatoes, not apple pieces, but some delicate aromatic apple soufflé!

Recipe from Dr. Otter's Baking Joy!

I made apple ones! The dough was kneaded by a bread machine for 12 minutes on the "pizza" mode. Soft elastic dough turned out, not sticky. Apples were rubbed with small straws with berner. It took longer to bake than indicated in the recipe. Apparently, these are the features of my microwave, at first I baked for 20 minutes on convection 160 g, they were baked, but were pale. Then 10 minutes for 180, and another 5 minutes for 250 grams.
What I liked: not cloyingly sweet, the shortbread dough inside from the filling is not wet (I don't like wet), fluffy-airy. Let me turn into a tumbler, but with bananas I will also make such pies !!!!!

Bananas should be great too
At one time I very often made puffs - I wrapped a banana in a purchased puff pastry, lightly sprinkled it with sugar and baked it - it was very tasty, and with such a curd dough it seems to me super!
I have already kneaded the dough, I will try it soon, I decided to make half with apples, half with bananas.
I will report on the results later.
........................ ........................ ........................ ....

What can I say .......
those with apples I would call "Apple Paradise", and those with bananas - "Paradise Delight"
for banana dough, lightly greased with lemon sugar, when baking, the juice is released from bananas and the pies "leaked" a little, but the leaked juice is something

Do you think you can leave this dough for a while, well ... let's say, leave it in the fridge overnight?
Stern
Tiny, I'm sure you can.

Stella,
Your cream buns yesterday my husband and I shared equally for him 8, for me 2 (made a half portion)
and after them it was so impossible for me to want yours "Puzanchikov"that after walking in the park with the child, she ran home not to lie on the sofa, but straight to the oven
and they turned out so beautiful that I could not help but boast

Donechka tasted one in the morning, did not have time anymore, was late for school, said I would come and catch up, my mother "limited" herself to two ... these are our restrictions ...

Stelochka, I cooked a double portion of the pot-bellies dough for the night yesterday, baked half at night, put the other half in the refrigerator until morning, in the morning I made bagels with plum jam from it. So I put 100 ml on a double portion of the dough. vegetable oil, that is, the amount that is required for one. So that's what I mean ... I liked the dough with half the amount of butter more in my work (I didn’t notice the difference in my taste either), because when I first made bellies with bananas, my dough already "squelched" from the excess oil ... Maybe I did something wrong? Did I have a "squishy" dough alone? Or is my oil hefty oily?
Stern

Tinyit looks like you really have butter or other flour. I have a dough with a full norm of oil just right - neither add nor subtract.
You with luchok consult as she had.

I support, everything works out perfectly, nothing squishes. But less oil is always better ... for those who are limited

Girls, truncated understood, it means I really have "butter oil"! The dough turns out to be excellent, but when cutting, the entire silicone mat is in oil, the hands also have time to get so oiled that the need for creams simply disappears!
For the consultation I brought you bagels from the "pot-bellied" dough:

I also dragged myself with my little bellies ...

Stelochka, a wonderful miracle and not pies !!! Thank you, dear !!!

P.S. Banana filling, instead of apricot jam, greased with lemon sugar mixed with cognac and lemon juice ...

I didn’t daub it with an egg for sprinkling, they blushed perfectly !!!

Tiny, good health, my dear Curd pies Puzanchiki and thanks for the report!

Thanks a lot for the recipe! I did it with a banon and an apple. The filling is simply gorgeous! And my dough turned out to be fat and loose, that is, it was simply impossible to roll out, it was torn. I was kneading flour, but it did not help much. The pies turned out to be ugly, but still very tasty! You, of course, find it difficult to tell you how to fix mistakes without seeing the original products, but you really want beautiful pies. I will repeat! Thank you
Stern
sve, I can tell you why the dough turned out unsuccessful - the cottage cheese is to blame, unfortunately I often come across this. Change the curd and everything will work out, for sure.
sve
Tell me, what should be the cottage cheese? I have 18%, according to the label, viscous, not liquid, not crumbly.
