Ingredients

1st grade flour 520 g
Water 300 g
Salt 7 g
Sugar 60 g
Vegetable oil 15 g
Fresh yeast 15 g
Powdered milk 100 g

Cooking method

  • This bun is made from 1st grade flour, has a weight of 80g (mine weigh more, I was reluctant to tinker with trifles). This amount of dough should make 12 rolls.
  • Since there is not much muffin as such in buns, it is prepared using a safety method. And we are glad that there is less fuss. HP is used as a kneader. Yeast is placed in warm water, all other ingredients are poured, the dough is kneaded well on the "Pelmeni" mode (for Panasonic 255) or another mode that just mixes everything up. The consistency of the dough is somewhat sticky. The gingerbread man is formed but sticks a little to the sides of the bucket. Below, in the place of work and rotation of the blade, it can even be slightly smeared by the "substrate". Not much.
  • Then the dough is fermented in the heat for 3-4 hours with one or two kneading. At the same time, heat is really warm, that is, up to 37-40 degrees (I use an oven). If there is no such warm place, then increase the fermentation time. The first kneading is after the dough has increased 1.5 times. Crushed by hand, by pressure and crushing from above. Without fanaticism. After further raising (3 times), you can already start cutting or leave the dough for another rise.
  • After fermentation, the dough is poured out onto a dusty table, cut into 12 parts (I only made out of laziness. Round buns are formed from each piece, proofed for 50 minutes and baked with steam at a temperature of 190g (for ovens without convection) or 180g (for ovens with convection ) 14-16 minutes The top is not smeared.

Why is it called "Octobrist" - don't even ask. At least that little red bun in the photo is definitely not an Octobrist. Where else he walked there or lay around - I do not know. Not a Komsomol member, not a communist or a pioneer. And here is the Octobrist and that's it.

I was surprised by the very high content of milk powder. But this is GOST. If so, I trusted him and tried exactly as indicated. Delicious sandwich rolls with a minimum of hassle: the dough is evenly porous, slightly sweetish. All labor costs - pour the ingredients into the HP bucket (or the mixer bowl) and then form the rolls. All. If baked the night before, there will be excellent "burgers" with homemade buns for the whole family in the morning.
I have already softened the sandwich, I really liked it.

You can also dry. 1.5 is too much. 1 tsp will be sufficient. With so much dry yeast, the timing may not have to be adjusted. Look then according to the test: increased by 1.5-2 times - knead, increased by 3-4 times - cut (or knead again and let ferment).

I ate a hamburger once in my life for a very long time. Even when I was in McDonald's in Italy (it was located next to the hotel), we hit salads and ice cream there. So I really don't know what a hamburger bun tastes like ... I remember that with sesame seeds. This is where the memories end.

Take better baby food - the quality is much better. I couldn't make bread with powdered milk - I threw it away. I know for sure that because of milk powder.
