I think that sorbets are the same as in an ice cream maker with a bowl that needs to be frozen. But the higher the fat content of the ice cream, the softer it is in consistency. Therefore, it all depends on the recipe.
The advantage of the freezer is that you can make any sorbet or ice cream, even with alcohol. You don't have to think about whether the accumulated coldness of the bowl is enough or not. It takes much longer to prepare ice cream with alcohol.

So I still think how they can get out in restaurants with this machine - well, not enough and that's it! We are not gluttons, but when you put them on plates, you get a not very impressive pile (this is for five) for each. And waiting another hour for extra ice cream is depressing. in the instructions for Nemox I read the point - between the wall of the bucket and the container where it is placed - there is an air gap. There you need to pour either vodka (vodka 1: 1 with water), or water with salt (a lot, a lot of salt - until it stops dissolving) at room temperature. Or any other non-freezing food grade liquid. It is a conductor of cold, instead of air, which has very poor thermal conductivity.
These fluids must always be filled so that there is no air gap when using the removable bucket.

When you finish, rinse the container urgently - there is a thin layer of varnish, there may be corrosion if there is a microcrack. Better something with alcohol.

I tried to fill in water with vodka, as the instructions say. I did not notice much difference in cooking time.In my opinion, you shouldn't bother with liquids. I just put the container.
