What, what, and the plums this year just disfigured darkness! I dried and froze. Well, and, of course, I prepared a marshmallow.
My plums are sweet and sour. Sugar usually took a lot of plum marshmallow. But I found a way out)) And these are dates. Not only do they perfectly complement the taste of the marshmallow, but they also perfectly compensate for the acidity of the plums.
So, for 2 kg of pitted plums, I take a package of dates (600 g). If your plums are not very sour, then you can take less dates. By the way, I recommend taking Mazafati dates (it is better in a box, and not by weight, since loose dates are often soaked in sugar syrup). Remove the zest from the lemon, and remove the seeds from the dates (I additionally remove the skin from them, I really don't like it). We interrupt everything together in a blender and pour it onto trays of an electric dryer, pre-lubricated with vegetable oil. You can sprinkle sesame seeds on top, it will not be superfluous. I dried at 50 degrees for a little more than a day (about 26 hours). When I dry for so long, I turn off the dryer to "rest" only once for 30 minutes, about halfway through the journey (I have Belomo). If you dry in the oven, then at a temperature of 80-100 degrees with a slightly open door.
The taste and aroma of the resulting marshmallow resembles a candy, the ingredients are difficult to guess. The pastille is sweet, but it does not contain a single gram of sugar!

I think that 1: 1 will be a lot. Try adding gradually. My plums are sweet and sour, but when I interrupted in a blender, it turned out sour, the sweetness disappeared somewhere (most likely the sour skin did its job), but 600 g of dates was enough for my head.
