Creamy spaghetti with pumpkin and garlic cabbage

Ingredients

For pumpkin sauce
Sun-dried tomatoes (in oil) 1 cup
Bulb onions 1 PC.
Garlic (slices) 2 pcs.
Fresh green basil (or sage) 3 sheets
Pumpkin puree 1 + 1/2 st.
Tomato puree or tomato sauce 1 tbsp.
Chicken bouillon 4 cups
Cream 1/2 tbsp.
Ground cinnamon 1/4 tsp
Olive oil 1-2 tbsp. l.
Salt taste
For pasta
Ground turkey 450 g
Spaghetti (pasta) 230 g
Bulb onions 1 PC.
Chili pepper (ground) or black pepper (ground) taste
Ground dried garlic taste
Salt taste
For garlic cabbage
Olive oil 2 tbsp. l.
Kale 1 bundle
Garlic wedges 2 pcs.
To serve
Parmesan or any cheese to taste

Cooking method

Sauce. In a large saucepan over medium heat, sauté the sun-dried tomatoes in a few tablespoons of oil. Add onion, garlic, basil and sauté until soft.
Add pumpkin puree, tomato puree, chicken stock, and cinnamon. Cook over low heat, stirring occasionally, for about 15 minutes. Add water or broth as needed to keep the sauce from getting too thick.
Bring the mixture to a homogeneous consistency with an immersion blender. Add cream, season with salt and pepper to taste and heat the sauce.
Paste. Cook the pasta according to the directions on the package.
While the pasta is boiling, fry the minced meat with finely chopped onions, pepper and salt in an extra skillet. Add a few tablespoons of water as needed to keep the meat juicy.
Cabbage. Heat olive oil over medium heat, add garlic cloves and sauté until light golden brown. Remove the garlic from the pan. Add cabbage, no stalks and not too coarsely chopped. Fry until it falls off, losing volume.
If you decide to substitute broccoli for kale, first boil the broccoli in boiling water for 3-5 minutes, then simmer in melted butter (or olive oil, vegetable oil) with garlic and black pepper. I was making spaghetti with mizuna and broccoli.
Completion. Mix turkey, sauce and pasta together. Serve with cabbage, sprinkled with cheese to taste.
