Jam Pudding (Jam Roly-Poly)

Ingredients

Self-rising flour 175 g
Powdered sugar 25 g
Lard (margarine, butter) 100 g
Milk 75 ml
Jam raspberry or strawberry 125 g

Cooking method

In a blender bowl, pulse the flour, icing sugar and fat into crumbs. Add cold milk and knead the sticky dough. When replacing lard with butter, add a pinch of salt to the dough.
Lightly dust the work surface with extra flour and pour the dough out of the bowl. Gently crush it into a flat disc, and then roll it into a 20.5 x 28 cm rectangular slab.
Spread the jam all over the dough, leaving a border around the edges to prevent the jam from flowing out when the dough is rolled up.
Fold the edges along the short sides of the rectangle slightly, and then roll the dough into a roll along the long side. Seal the narrow sides of the roll well.
Take a sheet of foil, turn the matte side up. Place a sheet of parchment paper on a sheet of foil, grease or oil the parchment. Both sheets should be wider than the roll. Place the roll in the center of the parchment. Lift the edges of the foil and parchment sheets up and seal them over the roll, in the center. Tuck the opposite ends of the narrow sides several times and seal well. Do not wrap the roll too tightly, as the pudding will slightly increase in size during cooking.
Place a deep baking sheet on the bottom shelf of the oven and pour boiling water into it. Place a wire rack just above the level and place the sealed roll on top of it so that the foil does not touch the water. Cook the pudding at 180 C (convection - 160 C) for 1 hour 45 minutes.
Remove the pudding and let it sit for 5 minutes before unrolling the foil and parchment. Cut it into thick slices and serve warm with custard or sweet cream.
