Although we have a land of evergreen tomatoes, harvesting from them is somehow more preferred in the south, here is one recipe.
Recipe from Center Thermomix-Novosibirsk (I have not tried it myself)

Green tomato caviar
1.2 kg green or brown tomatoes
- chop 15sec / ck7 and lay out
600 gr carrots
- grind 7sec / ck6
60 g of vegetable oil
- add and simmer 20min / 100C / ck1
then add to the tomatoes
600 g of onion, chopped in portions
60g vegetable oil
- put in a bowl and simmer
10min / Varoma / ck1.5
then grind 5sec / ck7
Add tomatoes and carrots
1 tsp salt
- extinguish 60min / 100C / sk1.5
Arrange in hot jars and roll up immediately.
Turn the banks over, wrap them in a "fur coat" for slow cooling.
