Bread with two types of whole grain flour in the Moulinex bread maker

Ingredients

warm water 260 ml
honey 1 tbsp. l.
sugar 1 tsp
salt 1.5-1.8 tsp
olive oil 2 tbsp. l.
red (rye) fermented malt 1 tbsp. l.
fresh pressed yeast 10 g
whole grain oat flour 50 g
whole wheat flour 170 g
wheat flour premium 230 g
peeled sunflower seeds 100 g
flaxseeds 50 g

Cooking method

Pour warm water into a bucket of a bread machine, add malt, sugar, add honey, crush yeast, add olive oil, then add all kinds of flour, add salt on top. In the process of mixing, we look at the gingerbread man, perhaps we need to add a little water or flour - it depends on the moisture content of your flour, the conditions of its storage, etc. I always make the gingerbread man a little sticky, not smooth, because then at the stage of presenting the ingredients the seeds are not interfere with the dough if it is too steep. If the seeds still hardly interfere, you need to drop a little water and help with a silicone spatula. Also, seeds can be put at the very beginning.
This is the bread that I bake the most. Oat flour, even in such a small amount, gives a pleasant taste, malt - a little taste and color, the same gives honey, the crust is always very tasty.
My bread maker is Moulinex OW110E31 Homebread. Always use Program # 3 (Whole Grain Bread), dark crust. Duration of the program 3:32. The indicated amount of ingredients is 750 gr per loaf. Where the measures are indicated in spoons, the teaspoon and the tablespoon are the measuring spoon of the bread machine, without a slide.
Possible changes:
1) I indicated the amount of salt 1.5-1.8 tsp. - depending on how you like it, 1.5 offers moulinex in a whole grain bread recipe in a book for a 700-750 g loaf, but if you like a little saltier - 1.8 tsp.
2) If there is no oatmeal flour, you can replace it with wheat whole grain - increasing its amount by these 50 grams - the taste will be slightly different, but it will also be great, I used to bake like that.
3) If there is no honey, you can put 2 tsp. sugar - so, again, offers moulinex in the whole grain bread recipe in a book for 700-750 gr.
4) Seeds can scratch the bread maker's bucket. I read a lot of reviews - someone pours seeds directly into the dough, but still scratches appear on the bucket, someone does not appear, even if they are poured at the stage of adding ingredients. It probably depends on the particular bucket. Mine is already slightly scratched (the bread maker is 3 years old). Your bucket is your responsibility. You can always bake everything without seeds, but this is a different bread.
5) More about seeds. Sunflower seeds can be pre-fryed a little in a pan (you yourself understand how this will add flavor - inside the bread, and not just in the crust). You can also add some pumpkin seeds, reducing the number of sunflower seeds accordingly. You can skip using flaxseeds if you don't like them or if they don't suit your body.
6) Red (rye) fermented malt gives flavor and color. Based on personal preferences, its amount can be reduced, increased or removed altogether - but this will already be a slightly different result.
7) If you change fresh pressed yeast to dry, then instead of 10 grams of fresh yeast there will be 1 teaspoon of dry yeast with a slight slide. Then the salt goes into the water, and the dry yeast goes on top of the flour. If you cook on the timer with fresh yeast, then it seems that they should be crushed into flour then, and not into water, but I never did that.
