Verdens Beste Cake

Ingredients

flour 100 g
egg yolks 4 things
milk 3 tbsp. l
baking powder 1.5 tsp.
vanilla sugar 1h l

egg whites 3 pcs
sugar 150 g
almond petals for sprinkling
for custard
milk 250 ml
eggs 1 PC
sugar 50 g
corn starch 15 g
vanilla (pod) 1/2 pc
butter 25 g
for cream diplomat
custard ~ 300 g
cream 33-35% 100 ml

Cooking method

Let's make a biscuit dough. Grind soft butter with sugar and vanilla sugar. Add the yolks to the oil mixture and beat until smooth. Then add the sifted flour with baking powder and knead the dough (consistency of soft butter).
Put the dough in a mold covered with baking paper and spread evenly. It is more convenient to bake in a small rectangular baking sheet with high sides.
To prepare the meringue, beat the whites and sugar until they peaks. Then spread it evenly in a thick layer over the biscuit layer and sprinkle with almond petals.
We bake the cake for 25-30 minutes in an oven preheated to 180 degrees until tender. Look at your oven, you may need to lower the temperature to prevent the meringue from blushing too much.
For the custard, cut the vanilla pod, scrub the seeds and place them and the pod in a saucepan with milk. Place on the stove. Bring milk to a boil and remove from heat. Combine eggs with sugar and starch and mix well with a whisk. Pour the hot milk into the egg mixture, stirring all the time. Pour into a saucepan and put on fire. Boil the cream until thick, stirring constantly. Add oil, stir. Remove from heat, pour into a cup, cover with foil in contact and refrigerate for 2-3 hours.
To make the diplomat cream, whip the cream until fluffy and mix with the custard until smooth.
We collect the cake. Cut the finished cake into two parts. Take one piece and place it face down (meringue) on a platter. We spread the cream in a thick layer, cover with the second part (meringue up). We put the cake in the refrigerator for 2-3 hours, preferably at night.

Verdens Beste is a traditional Norwegian cake. The literal translation is the best in the world.
The cake is wonderful! Delicious and tender. It is quick and easy to prepare. It is better to eat it chilled, then the cream tastes like an ice cream. I highly recommend it.
Form 20x30 cm. You can take a little more, and then make the meringue from 4 proteins. I do not recommend a too large form, you will not be able to fold the cakes, they are very delicate and fragile.
