Ingredients

For the cake:
Eggs 2 pcs
Sugar 60 g
Flour 60 g
Coconut flakes 2 tbsp. l

For mousse:
Yolks 3 pcs
Cream 33-35% 260 g
Milk 130 ml
Cream cheese 300 g
Sugar 1 tbsp. l
Raspberry syrup or puree 120 g
Gelatin 20 g
Water 100 ml
Powdered sugar taste
For the jelly layer:
Raspberry syrup or puree 150 ml
Gelatin 8 g
Water 40 ml
Form 18 and 20 cm

Cooking method

This cake was invented on the occasion of the wedding anniversary of our elders. But we ate it without them. They live far from us, but we celebrate all their holidays at home. Ask - why is the raspberry ringing? So just before that I cooked raspberry jam and the syrup remained. So what to use. And while she was cooking and jamming the jam, she sang the song "Raspberry ringing at dawn ...".

For the crust, beat eggs with sugar, vanilla and salt until white. Add flour and coconut. Stir gently with a spatula. Add toasted almond petals. mix. Pour the dough into an 18 cm mold. Bake at 180 g until tender.
For mousse, pour gelatin with water.
Grind the yolks with sugar. Bring the milk in a saucepan to a boil and pour it into the yolks with a thin construction, stirring continuously. Pour the mixture into a saucepan and, over low heat, bring until thick, but do not let it boil. Remove from heat and add the swollen gelatin and stir until completely dissolved and allow to cool.
Beat the cream until soft peaks.
Mix curd cheese with a spatula with powder and at the end beat a little with a mixer and add whipped cream to it in two or three doses. Then slowly pour in the custard mixture, stirring continuously with a mixer.
Divide the mousse in half and add the raspberry puree in one part, mix.
Cover the bottom of the mold 20 cm with cling film, line the sides with acetate tape and place on a plate or kitchen board. Put the biscuit in the mold and pour the raspberry mousse. Put in the freezer for 10 minutes.
For a raspberry layer, pour gelatin with water and let it swell. Melt the swollen gelatin and pour into the syrup. Mix.
Pour the jelly onto the raspberry mousse layer. And put it in the freezer so that the jelly grabs. Then pour the second part of the mousse on top. Remove in the cold until completely solidified.

Free the finished cake from the ring and ribbon. Decorate as you wish.
I printed the drawing, put a piece of the file on top and drew it around the contour with melted chocolate. She put it away in the cold. Then she turned it over on top of the cake and took off the file. Made hearts with raspberry jelly. And decorated with sugar hearts and beads.

Note
