You can insert my "three kopecks", otherwise no one answers. You do not need to pickle vegetables. First, bake, and then season with whatever you like. I refuel: salt, sugar, black. pepper, rast. oil, apple or grape vinegar.
You can bake it in pieces or whole. Whole eggplant, better wrapped in foil, otherwise it "shoots". The baked zucchini will crunch, try it first, for an amateur. Pepper bulg. delicious too.
For shish kebab, cut onions and tomatoes into rings. I put in layers in a dish, add, pepper and sprinkle with vinegar. For at least 30 minutes. in the refrigerator, or without it. Then I bake it.

I marinate vegetables like this: I cut eggplants, zucchini, onion into circles, and pepper into 4 parts.
Marinade: vegetable oil, salt, grilling spices, a little apple cider or balsamic vinegar. Marina for about half an hour while I fry the meat. An excellent side dish turns out!
