I do not consider myself a specialist. But from personal experience, I noticed that when the nitrite salt was added, the taste became different, more intense or something. Again, the color is preserved, which is important for me. I cook mainly from turkey (fillet and drumstick) and without nitrite, the ham had a gray unappetizing color
