Filipino bread Pandesal adapted to potato hop yeast

Ingredients

OPARA:
* Starter potato-hop 75 g
* Water 75 ml.
* Wheat flour 150 g
DOUGH:
* Wheat flour 400 BC
* Butter (softened) 80 g
* Warm water) 225 ml.
* Breadcrumbs 50 g in dough + 50 g for sprinkling
* Powdered milk 40 g
* Salt 2/3 tsp

Cooking method

  • The oil must be pre-softened. Heat the water until warm before kneading.
  • We need a dough. We will start it from a starter, water and flour, in the indicated proportions.
  • After fermentation, pour in water, add salt. Stir until a homogeneous emulsion.
  • We introduce flour, crackers, milk powder and start kneading.
  • As soon as the bun begins to form, add butter and continue to knead the dough.
  • Knead for a long time, until the dough begins to lag behind the dishes and hands, although it remains slightly sticky.
  • At the end of the process, cover the bowl with foil and put it in a warm place for lifting until it doubles in volume.
  • When forming the dough, you can not crush much, work gently))
  • Divide the gingerbread man in half. Roll out each part into a sausage, sprinkle with breading, then the dough stops sticking to your hands.
  • Now we need to divide the sausages into 6-8 parts. Shape each piece into a washer and place on a baking sheet lined with baking paper.
  • Give the final proof and you can preheat the oven.
  • This bread is baked at T = 190-200 * C until blush.
