The meat grinder (to which the pasta disks are attached) makes an impressive impression, but at the same time I am the proud owner of the Philliers pasta machine. However, Phillips' and Arkasha's curly paste disks do not match. The Swede has thin pasta with a hole (this is the famous macaroni, which gave the name to all pasta in Russian - pasta), flat pasta of various widths / thicknesses, and spaghetti. In my opinion, even thicker than Philips' ones, although I wanted thinner)). In short, I'll take a picture.

I tormented my Arkasha diligently today. I decided to try paste disks. But only the abnormal follow the instructions. Particularly gifted - they do what they want, what took it into their heads. I'm from the second)).

So, the instructions say that you need to make a dough from 350g of hard flour and 2 eggs. The usual rule is 100g flour - 1 egg is trampled here almost 2 times. Eggs, of course, are different, but not to the same extent, it seems to me. Although it is suggested to add some lukewarm water if the dough is dry and crumbly. Knead the dough, let it stand and toss for extrusion in pieces the size of a walnut.
I decided that I would go my own way - I’m the smartest and most experienced, haha, you Swedes!)) - and first I would make wet dough crumbs according to Phillips proportions (at the same time I torment the blender) and pour it into the pasta. After all, in Phillips, of all this, chic pasta, with the Kitchen pasta nozzle, also baked. Brilliant, right? Yeah, not this time)). Arkasha's blender did not want to turn the flour and eggs taken with the addition of water (for 1 cup from Philips pastam machine) into any crumb at all. I changed the speed, gave out sacred words to the Universe, periodically poked with a spatula, but nothing helped: it immediately formed a funnel around the knives and the rest of the mass froze along the walls. Having suffered a lot with it, I pulled out the chopping bowl from the Brown hand blender and after 15 seconds I had a wet dough crumb .. It should be noted, however, that Arkasha even had a different shape of knives in the blender. And, apparently, it matters.

I had fun with my husband for a long time and decided to change tactics - to use soft durum dough, which I had ready to use. It is relatively soft, of course, I make dumplings from this. But, in any case, it is much softer than the classic pasta dough. All the more tiny. I got this:


Then I decided to plug the very first tough dough, which was at first a crumb, but after the experiment, I just blinded it into a lump and let it lie in a bag. This was just the closest to the test from the instructions. It turned out much better. We can say that it worked out fine. Considering that this is still pasta with holes, that is, not so simple products.



Then I decided to change the disc, because I also have complaints about the quality of the resulting pennies in the pasta machine. That is, pasta with holes is a rather complicated type of pasta in "execution". I took a simple disc - flat pasta like fettuccine. But then I burst into the dough, because, already wanting to quit this wonderful occupation, I blinded together both a tough dough and a soft dough for dumplings. And only then I got the idea to try another disc. As a result, I extruded something average in consistency, which of course tends to stick together, but not as much as pure soft dough)).



Conclusion: of course, you have to jump with the selection of the consistency of the dough. This is always the # 1 problem, and in shepherds too. Of course, it is more problematic to deal with it than with a pasta, because at the same time it is necessary to throw in pieces of dough (tearing off and rolling balls the size of a walnut), and to keep an eye on the creeping pasta, to cut them off in time and all that. But the machine copes, does not complain, does not puff strained, although it warms up. Moreover, the extruder itself (it is a meat grinder) is heated, not the engine.

The machine works powerfully, does not complain or even practically does not notice the efforts to squeeze out the juice (the engine sound does not change). I made the plum chili. It needs lemon juice. Soon I will cook citrus chili and hello citruspress will be again)).

Not crackers, not fresh, but seasoned. I usually put butter, I almost never have lard. Only salted food. I haven't verified the proportions for a long time either, because I know that there should be decent bread, no egg, no butter - by eye, but generously enough and better very cold (like minced meat). Sculpt and fry straight from this - the juiciness is higher, because the grains of butter are already melting in the prepared cutlet.

I doubt it. In my opinion, minced meat is kneaded with a K-shaped attachment (I knead in Kitchen. Not for sausage, really). The device of the bowl and rollers Ankarsrum is specific. If the dough is "monolith" and stretches in a layer, then the minced meat does not have such a bunch.
