Pizza with zucchini and creamy curd sauce

Ingredients

Pizza dough 500 g
For the sauce:
olive or vegetable oil 2-4 st. l.
garlic (cloves) 1-2 pcs.
cream of 33% fat 100-150 g
cream cheese 140 g
salt 1/2 tsp
For filling:
zucchini or zucchini 1-2 pcs.
zucchini or vegetable marrow flowers 5-7 pcs.
feta cheese or fetaxa 200 g
fresh basil leaves taste

Cooking method

  • Pizza with zucchini and creamy curd saucePrepare the ingredients for the filling. Rinse the basil and zucchini leaves under running water. Rinse each zucchini flower under running water, cut off the stem and remove the sepals, make a neat cut on one of its sides, remove the pistil and stamens with gloved hands (pollen stains, but in general is washed off with water) and rinse the flowers again under running water or, alternatively, leave the flowers in a bowl of water for 1-2 minutes. Dry the greens and zucchini flowers.
    Pizza with zucchini and creamy curd saucePeel the garlic and fry it, adding 1 tbsp. l. olive or vegetable oil, over medium heat for about 2 minutes, until tender. Turn off the heat, remove the garlic from the pan and mash in the puree, removing the fried crust.

    Pizza with zucchini and creamy curd sauceTo prepare the sauce, place the curd cheese, a little cream, mashed garlic puree and salt in a bowl.
    Pizza with zucchini and creamy curd sauceBlend all the ingredients until smooth, gradually adding the remaining amount of cream, until the sauce becomes very thick sour cream.
    Pizza with zucchini and creamy curd sauceStretch the pizza dough into a round layer. For 1 pizza with a diameter of 20-22 cm, you need about 250 g of dough, or choose the dough weight and pizza size according to your preferences.
    Pizza with zucchini and creamy curd sauceTransfer the dough piece to the baking sheet, or skip this step if baking pizza on stone.
    Pizza with zucchini and creamy curd sauceSpread about 1/2 part of the prepared sauce on the surface of the dough in an even layer, leaving about 1 cm unaffected along the edge of the TK. Place the zucchini slices and then the zucchini flowers, pressing them lightly into the sauce. Add feta or fetax cubes, drizzle with a little olive or vegetable oil.

Anya, at one time I was looking for information on the Internet about cooking pumpkin flowers in batter and I, basically, came across options when the chefs removed the pistil and stamens both in pumpkin flowers and in zucchini flowers.In general, unpeeled pumpkin flowers are bitter in the finished dish, there is less zucchini, there was something else about not being useful for the body, so I just remove the excess from the flower, the work itself is not difficult and does not take much time.
