This is my second time making yoghurt in the Steba pressure cooker.
I like the result very much. I pour the milk into half-liter jars, add the sourdough, pour water over the shoulders. I set the temperature to 38 degrees. The yoghurt is ready in 5 hours. I have only one staff and therefore there are inconveniences of making yogurt in the daytime, since I cook the first, second, fry, compote in it every day.
It would be convenient to put milk on at night, but not to get up in the middle of the night to take out the cans and rearrange them in the refrigerator. If, for example, I put yogurt at 10 pm, set the time to 4 hours (+ an hour for the water to cool) and this yogurt stays with me until 8 am (another 5 hours in a bowl of water) will it not peroxide?

in my opinion, it can peroxide. But, if you put a timer on the outlet, then everything should be fine!
I sometimes cook porridge like this in a slow way at night That is, the porridge will start to cook then, in order to be ready for our rise
In your case, you can also calculate everything - in the evening you will install everything and the water from the Shtebe will begin to heat up exactly 5-6 hours before your rise

I don't even know if a delayed start is provided for the heating mode. In theory, no.

it doesn't matter, you just need to buy a timer and Shteba will start working when you need it.

That is, immediately pour cold water? So that it warms up later? An interesting solution))
