Cooking method

  • For making the marinade peel the tangerine, cut into small cubes, removing the seeds. Peel the onion, rinse under running water, cut into half rings and mash it well with chopped tangerine. Add bay leaves. Brush the prepared meat with the resulting marinade on all sides. Place the meat in a glass bowl, cover with cling film and refrigerate for 3 hours.
  • Before cooking remove the meat from the refrigerator, remove the marinade, sprinkle the meat with a mixture of salt and pepper. Rinse dried apricots and nuts thoroughly under running water and fill the meat with them. Tie up the meat with cooking string and lightly brush all over with vegetable oil.
  • In a well-heated frying pan, quickly fry the meat until golden brown, transfer it to the multicooker bowl, adding a little fat from frying and a few tablespoons of boiling water. Install the "Put out" program, the time is 2.5 hours. After the end of cooking, the meat remains on "Warm up" for about 1 hour. Transfer the meat to a serving dish, cover with a sheet of foil and let sit for 10 minutes before serving.
  • Very juicy and tasty meat, good both hot and chilled.

Ilona, tell me please, can you cook beef in this way? My daughter brought a decent piece, and the boys do not want to eat beef dishes in any way: she is rather dry ...

Natalia, the marinade is generally quite suitable, you can add a little strongly carbonated mineral water, but everything else does not go well with beef. Alternatively, after frying, bake the meat in foil on a pillow of coarsely chopped vegetables (onions, carrots). Adjust the cooking time depending on the size of the piece.
And, you know, if the piece, as you say, is decent, you could try to fry a steak, I liked the version from G. Ramsay:

, but I did not add thyme, but added salt and pepper immediately after cooking, and brought the steak to full readiness in an oven preheated to 180 C. In this version of cooking, the meat tasted very good, while when cooking in another way it was also not too juicy, as you described.
