How to choose a bread maker for your recipe?


Finally I got a bread maker (Panasonic 2512), made several breads according to the recipes in the attached book, it turned out great.

But now I want to go further, for a start, choose the composition of the flour myself. 90% of the recipes include white wheat flour, and I want to exclude it altogether. What should I focus on? I want to understand the principle. Can I make bread without white flour in the "basic" mode, or is it just a trial and error method, try to do it on different programs and see how it goes?
