Quinoa cutlets with almonds, rosemary and Dijon mustard

Ingredients

quinoa 100 g
almond 40-50 g
shallots (or turnips) 2 tbsp. l
rosemary (fresh) 1 tbsp. l
dijon mustard 1 tbsp. l
black pepper (ground)
salt

Cooking method

  • Prepare quinoa as directed and cool.
  • Chop nuts, rosemary and shallots. Stir in the finished quinoa, add salt, pepper and mustard.
  • Blind the cutlets and fry them in a preheated pan in sunflower or olive oil on both sides until crisp.
  • Serve with lemon slices, yogurt or sour cream.
