There is a basic bread recipe - 1 kg of flour, 625 ml of water, 30 g of fresh yeast, 2 tbsp. l. sugar, 1 tsp. salt
And now this dough is kneaded, as I understood, the way our grandmothers did it - a hill is made in a heap of flour, half of the water is poured into it, sugar, yeast, salt and mixed with a fork. Then flour is mixed from the edges of the hill so that water does not flow out and water is gradually added.
I am preparing for the holiday the other day, I want to bake one interesting roll, but spend as little time as possible.
So the question is: can you use HP to knead a good dough according to this recipe? or does it only require human hands?

If the "trick" of this bread is precisely in hand kneading, then you yourself understand - the answer is obvious

The bread maker will calmly knead bread for you with a maximum of 600 g of flour, so the amount indicated in the recipe must be counted:

1 kg flour, 625 ml water, 30 g fresh yeast, 2 tbsp. l. sugar, 1 tsp. salt

say, if you take half a portion, it turns out:

500 g flour
312 ml water
15 g fresh yeast
1 tablespoon sugar
0.5 tsp salt

now, compare this amount to the basic recipe from your bread machine:

for 500 g flour
330 ml water
fresh yeast, we usually put 10 g for this amount

so, in principle, the recipe fits into the "baking" standards, perhaps this bread should have a denser crumb, and in order to raise it a little more yeast is added ..

In general, experiment, and then tell us what happened!

I managed to knead the dough in HP. I made it for a roll, also according to J.O.'s recipe like this:

And since I cooked another portion by hand, because I needed a lot, I will say frankly: the bread maker kneaded better than me, to my shame.
