Pumpkin and leek soup baked with cheese and rye bread

Ingredients

pumpkin 300 g
leek 2-3 pcs
Parmesan cheese 100 g
butter 20 g
water ~ 600 ml
Rye bread 4 slices
salt, pepper, curry taste

Cooking method

  • Cut the white part of the leek into rings.
  • Peel the pumpkin and cut into large cubes.
  • In a deep saucepan (or slow cooker), melt the butter, add the onion and pumpkin, fry a little, salt, add curry and pepper, pour in water or vegetable broth, cover and cook for 10-15 minutes over low heat, until the pumpkin is cooked.
  • Grate the cheese on a coarse grater.
  • Use a slotted spoon to remove the pumpkin and leeks. Keep the broth hot.
  • On the bottom of two clay pots (for baking), put a slice of rye bread each (it is better if the bread is stale or slightly dried), sprinkle with grated cheese, put a layer of pumpkin and leeks on top. Repeat this sequence one more time, sprinkle with grated cheese on top.
  • Pour the remaining broth into the pots and grill the soup until golden brown (5-10 minutes).
  • Remove from oven and serve immediately.
