Cooking method

  • Galaktobureko (γαλακτομπούρεκο)First, let's prepare the filling. Beat eggs and yolks with sugar into a very fluffy foam, add semolina, vanillin (or vanilla extract), gradually pour in hot milk, continuing to beat all the time. Pour everything into a saucepan and simmer the cream over low heat until slightly thickened, stirring constantly. Remove from heat, add butter (if the cream is not smooth and with lumps, beat it with a mixer).
  • Galaktobureko (γαλακτομπούρεκο)Defrost the filo dough. Unfold the roll of dough and lay the sheets in a stack, cut the stack in half to make sheets of 20x30 cm. Cover the sheets with a damp towel.
  • Galaktobureko (γαλακτομπούρεκο)We spread six sheets of dough in a mold so that the edges of the dough hang down, smearing each sheet with melted butter.
  • Galaktobureko (γαλακτομπούρεκο)We spread the cream in a mold, level it, wrap the edges of the hanging dough with the filling.

  • While the cake is baking, prepare the syrup. Pour sugar into a saucepan with a thick bottom, pour water, lemon juice and cook for 10 minutes. Turn off, add honey, stir. After the cake is ready, remove it from the oven, pour it over with syrup and leave it for a while so that all the syrup is absorbed and the cake is well saturated with syrup.

"Galaktobureko" (γαλακτομπούρεκο) in Greek means "custard wrapped in filo." Golden, crispy - this is the Greek galactobureko pie. It is also called "milk". A delicious combination of butter cream and crispy filo dough soaked in citrus syrup. The pie is very delicate in taste and melts in the mouth. Outwardly, it is very similar to Turkish baklava.
