Ingredients

For biscuit
Chicken egg С0 3 pcs.
sugar 130 gr.
wheat flour of the highest grade 110 g
baking powder 1 tsp
For cream
mascarpone 250 gr.
sour cream 25% fat 250 gr.
sugar 80 gr.
peaches 1b. (800 gr.)
gelatin 15 gr.
lemon 1/2 pcs.
For impregnation
peach syrup 100 ml.
For jelly
peach syrup 200 ml.

Cooking method

  • Biscuit
  • Cake with mascarpone and canned peachesBeat eggs with sugar on high speed for 5 minutes. Sift flour with baking powder, add a little to the egg mixture and mix gently from top to bottom. Pour the dough into a greased baking dish and bake for about 30 minutes at 170C. The finished biscuit needs to be cooled. If possible, let it ripen for a day. It is better to bake and assemble the cake in a split form with a diameter of 22 cm.
  • Cream:
  • Leave 100 ml of peach syrup from the biscuit soak jar.
  • Cake with mascarpone and canned peachesIn the rest of the syrup, soak the gelatin, let it swell for an hour. If there is not enough syrup in the jar, then I bring the volume up to 200 ml. plain water or any juice, such as apple juice. Then squeeze a little (about 1/2 teaspoon) lemon juice there, three zest. We heat until the gelatin is completely dissolved, but do not boil.

  • Puree several halves of peaches and mix with jelly.
  • Cake with mascarpone and canned peachesSet aside half of the jelly for the top of the cake. Mix mascarpone (room temperature) with 40 g of sugar. Beat the sour cream separately with the remaining sugar. Combine sour cream, mascarpone, cooled jelly and mix gently (or beat at low mixer speeds) until smooth.

We spread the peaches on top - we leave some for the top of the cake (I don't have much left, the children turn out to be faster, but 5 halves are enough).
  • Cake with mascarpone and canned peachesPut the cream on the peaches and put them in the refrigerator for 2-3 hours, then put the remaining peaches (cut them into slices)
  • Cake with mascarpone and canned peachesPour the remaining jelly onto the peaches and send it back to the refrigerator until it solidifies

V-tina, this cake has a significant drawback - you want it more and more! And since the jar of mascarpone was 500 grams, it means that half of it remains ..... Do not waste such a product! There was a can of canned apricots, a pack of fresh cottage cheese - too .... The cream with cottage cheese, of course, tasted "heavier", but obviously good too.
