Yeast bread with semolina and buttermilk

Ingredients

buttermilk 190 g
water 240 g
wheat flour / grade 550 BC
semolina (semolina brand T) 60 g
honey 15 g
vegetable oil 15 g
pressed yeast 15 g
salt 12 g
flax seeds, sunflower seeds, or a mixture 25 g

Cooking method

  • Yeast bread with semolina and buttermilkI kneaded the bread by hand. Can be kneaded in any way possible.
  • Mix water and buttermilk. Dissolve yeast and honey in liquid.
  • Mix flour with salt. Make a hole in flour and pour liquid into it. Start mixing. Once all the flour is moist, add the oil and seeds.
  • Knead a soft, smooth dough.
  • Yeast bread with semolina and buttermilk
  • Yeast bread with semolina and buttermilkRoll the dough into a ball.
  • Grease the dishes and dough with butter.
  • Add dough, cover. Place in a warm place to ferment for 60-90 minutes. The dough should increase in volume by 2-2.5 times.
  • Yeast bread with semolina and buttermilkKnead the dough. Divide in half. Roll each part into a ball. Cover and leave for 10 minutes.
  • Yeast bread with semolina and buttermilkForm a loaf or round bread from each ball. Cover loosely with plastic wrap and leave to stand. The bread should double in size. Proofing can take 40 to 60 minutes. It all depends on the strength of the yeast and the temperature in the room.
  • Yeast bread with semolina and buttermilkCut the spaced bread and send it to the oven preheated to 240-250 degrees with a stone.
  • Yeast bread with semolina and buttermilkBake for the first 10 minutes with steam. Remove steam. Reduce the temperature to 180 degrees and bake the bread until tender for another 20-30 minutes.
  • Get it. Leave to cool on a wire rack.

Note

Delicious bread. The recipe is fancy. Recommend!

Angela, and instead of buttermilk, can I use whey?
ang-kay
Instead of buttermilk, you can take a glass of milk and mix it with a tablespoon of vinegar. Let stand for 5-15 minutes.

Baked.
Olya, turned out great. So quickly got down to business. Well done! Very nice. Were there any difficulties?
klavick
Angela, no, no difficulty. One difficulty I have is that I cannot make an incision normally. The dough reaches for the blade. And the taste is very mild. I also like your buttermilk buns. I often bake.
ang-kay
The incisions will be made. Will come with time. Try to lubricate the knife with butter if the dough is so soft. And choose the sharpest one.
Albina
Olya, I make cuts with a clerical knife (someone advised on the forum, I bought it especially for loaves)
ang-kay
Albina, you need to find your subject. Someone with a clerical, someone with an ordinary, someone with a special or a scalpel. I am the blade.
klavick
Angela, you can buy a blade. I cut with a special thing with Ali. I didn't think of oil. dipped the blade into flour.
Albina, I tried stationery - it did not work.
Fotina
I either do it with a construction cutter (I pulled off one blade from the mkzh), or with a razor blade. There is also a bent blade on the handle (from HP Moulinex, it seems) - they cannot, they cannot adapt in any way. Stationery did not work either - it is narrow, less than a centimeter. I'm also uncomfortable.
I came to see the recipe - now I will knead)

Suddenly it was discovered that the flax seed had run out. At all. Both white and dark. But there are many other seeds.I remembered about the Gourmet, and put white and black sesame seeds, sunflowers and pumpkin seeds. )) The rest is according to the recipe! (C)
We are waiting.

Here. Fresh out of the oven, cool down.

Stood a little, did not calculate the time with the pies. For 15-20 minutes it was necessary to put in the oven.

Stopped a little
Svetik, excellent loaves! They did not really survive. Maybe about 10 minutes. It shouldn't have affected the taste at all.

But many other seeds
Any you can, that is. You can put nothing at all, but then pour a little less liquid.

I only came to say thank you today
meatball, the main thing that came. I myself am guilty of this. There are a couple of recipes from the forum that I did, but I still can't get to say "thank you". We need to improve)
