Aromatic vinegar

Ingredients

vinegar any 6% (apple, wine, grape, etc.)
greens (dill, fennel, rosemary, celery, parsley, thyme, sage)
root (celery, parsley)
cloves of garlic
fresh chili pepper
bell pepper fresh
mustard seeds
Bay leaf
allspice peas
star anise, cloves optional

Cooking method

  • The number of ingredients is arbitrary.
  • Wash and dry any edible herbs.
  • Wash and dry the peppers. Chop the bell pepper.
  • Chop the garlic cloves.
  • Peel and cut the roots.
  • Put everything in a jar and completely pour vinegar.
  • Let it brew for two or more weeks.
  • Use when dressing salads, making marinades and sauces.

I promised to put this vinegar out for a long time. It's hard to call it a recipe. Most likely as a vinegar flavoring method.
If the neck of the bottle allows, then you can just pour out a little vinegar, and put everything you have in the bottle. It is more convenient to store in a bottle.
To prevent the vegetables in the bottle from disappearing, you need to constantly add vinegar. Vegetables should be immersed in liquid at all times.
I just keep it in the kitchen cabinet.

Irina, I have apple cider vinegar 6%. I put 1-2 chili, half a Bulgarian, a couple of garlic cloves. Pepper is generally not very scary, because it loses its pungency over time. I still make all the pepper vinegar. I put a full jar of peppers. And that's okay too. Vinegar is only used as an additive. Not much of it flows. You need to choose for yourself. Choose your ingredients.
