Striezel (Renata Lackner)

Ingredients

Dough:
pressed yeast 10 g
wheat flour of the highest grade 330 g
milk 190-210 g
egg 20 g
salt 5 g
sugar 30 g
vanilla sugar 10 g
butter 20 g
lemon zest 1/4 tsp
Finishing:
egg 15 g
pearl sugar *

Cooking method

  • Striezel (Renata Lackner)Melt the butter and combine with milk. Add salt, sugar, vanilla and zest.
  • Crumble the yeast, combine with flour, pour in the milk mixture and the egg.
  • Knead a smooth, soft dough.
  • Striezel (Renata Lackner)Leave the dough to ferment at a temperature of 26-27C degrees for two hours. In the middle of fermentation, knead the dough (immediately after kneading, I put the dough in the refrigerator for 12 hours, before cutting, I allowed it to warm up at room temperature for an hour and a half).
  • Striezel (Renata Lackner)Divide the dough into four equal portions. Round each of the parts, let the preliminary proofing for five minutes.
  • Roll each ball of dough into a layer, roll into a long roll. Allow to rest for about five minutes, then roll the rolls on the table, lengthening them.
  • Form a braid.
  • Striezel (Renata Lackner)Transfer the wicker to a baking sheet lined with baking paper and cover with loose wrap.
  • Proofing for 60 minutes at a temperature of 28-29C degrees, until the volume of the dough piece is doubled.
  • Striezel (Renata Lackner)In the middle of the proofing, grease the braid with a beaten egg, sprinkle with pearl sugar * (I have a mixture of black and white sesame seeds).
  • Bake in an oven preheated to 190C (convection 170C) degrees, without steam. After 10 minutes, reduce the temperature to 170C (convection 150C) degrees and bring the bread to readiness.
  • The total baking time for me was 40 minutes (be guided by your oven!).

Sonadora, ManyaWell, I baked this shtriezel ... according to the original recipe, though it doesn't say about butter. But I added 60g. Why waste time on trifles, I think, we still crack. And what can I say? Correctly, that immediately 3 pieces muddied !!! Delicious . True, the son said that this is not bread, but a bun, only there is not enough sugar
