Tell me, what spices or herbs do you put in soups for taste? I'm making soup, everything is fine. But there is a feeling that something is missing. Just for the last 5 years I cooked soups with a minimum of spices and additives, since there were small children. I put salt, round pepper and a couple of leaves of lavrushka. And now I don't even remember what I added for taste.

For example, a mixture of "Provencal herbs", hops-suneli, utskho-suneli, a mixture of peppers, a mixture of dried vegetables, etc.
But you can "bring" the soup to the ideal taste simply by balancing salt-sugar-citric acid-pepper, as well as ordinary herbs (dill, parsley, cilantro). Sometimes even a spoonful of mild adjika is enough.
When you "get a taste", you will be able to diversify this simple set already being guided by a feeling.
To do this, you can smell the seasoning / spice, if you like the smell, and try it on the tip of your tongue, if you like the taste, because some of them give and / or (taste, smell, color).
In addition, the taste of the soup can be "adjusted" even at the stage of making the broth, or it can be done directly during the preparation of the soup. At the same time, what was at the broth stage is muffled a little at the soup stage, that is, for a start, it is better to try brighter tastes at the broth stage, so that, if you don't like it very much, muffle them at the soup stage.
Also, I advise you to take a look at culinary school... There you will be taught how to choose the right meat, vegetables, how to pre-process them, how to get a very tasty result even without special additives.

Admin, Thank you. Somehow I didn't think about blanks this year. Well, except of course tomatoes and sweet peppers (though I don't dry them, I freeze them). And now is not the season. ((When I fry, depending on the soup, I fry onions, carrots, tomatoes and bell peppers. In the summer, of course, I'll think about making preparations from herbs. And what can you buy in the store now, maybe from dry herbs ?
