Crown Saint Clementius Cake

Ingredients

For orange dough
butter 80 gram
egg yolks c-0 3 pieces
fresh orange peel 1 teaspoon
fresh orange juice 70 ml
premium wheat flour 75 gram
cane sugar 15 grams
baking powder incomplete teaspoon
For lemon dough
butter 80 gram
sugar 75 gram
fresh lemon zest 1 teaspoon
fresh lemon juice 70 ml
egg whites C-O 3 pieces
chopped almonds 10 grams
premium wheat flour 70 grams
disintegrant incomplete teaspoon
juice of one orange and one lemon for impregnation
For decoration
whipping cream 350 ml
marmalade lemon and orange slices, almonds in chocolate, pills, fresh flowers

Cooking method

  • Making orange dough.
  • Rub the soft butter and sugar. Add the yolks one at a time, whisking all the time.
  • We introduce zest and juice, then flour with baking powder.
  • For lemon dough, rub butter with sugar. Add the zest and juice.
  • Then almonds, flour with baking powder. Mix well and gently add whites, whipped until firm foam.
  • If the mold is silicone, just grease it a little with oil.
  • If not, line with baking paper.
  • Lay both types of test in layers alternately.
  • Then mix a little from top to bottom with a fork.
  • Put the form with the dough in an oven preheated to 180 degrees and bake for 45-50 minutes, check the willingness with a stick.
  • Remove from oven, keep in the form for 10 minutes.
  • Pull gently out of the mold.
  • Cool completely.
  • For impregnation, boil a little citrus juice either on the stove or, like me, in the microwave.
  • Cut the cake into two parts, soak each.
  • Whip the cream.
  • Layer prepared cakes.
  • Spread the rest on top. Use a fork to emboss.
  • Decorate the edges with marmalade, almonds and dragees. Put fresh flowers in the middle.

Cream, mine is not eaten, replaced by butter cream. I took on a pack of butter, a full can of condensed milk. It turned out to be watery, similar in consistency to whipped cream. That's what you need.
