Rye flour 150 g
Eggs 3 pcs.
Granulated sugar 100 g
Sunflower oil 50 g
Salt quarter pinch
Soda (quenched with vinegar) 3/4 tsp
Ground cinnamon taste
Small apple half
Frozen raspberries taste
Frozen lingonberry taste

Cooking method

  • Defrost the berries, cut the apples into cubes. Sift flour. Divide the eggs into whites and yolks.
  • In a food processor (I beat with knives) beat the yolks white, gradually add half the granulated sugar, then all the flour, butter, soda, slaked with vinegar, salt, cinnamon. Put the resulting mass in two bowls.
  • Beat the egg whites, gradually adding the remaining sugar, until firm.
  • Gradually and carefully add one half of the whipped proteins to the dough of the first bowl. The other half of the proteins go into the second bowl.
  • Add chopped apples to the first bowl, berries to the second. Let's mix.

Apple pie on rye flour

The cupcake and the recipe that I'm posting today was intended specifically for Lyudochka, that's why it's called "For Buttercup"

Rye Cupcake For Buttercup

Since there were different fillings, the part with apples rose better than the part with berries.

Rye Cupcake For Buttercup

===============================================================================

I often bake a rye cake according to a recipe that I adapted for myself. I do it according to a simplified version: I beat the eggs with knives, adding sugar, then all the other ingredients. Baking, adding: 1-apples, 2- plums, 3- raspberries, 4- raspberries and lingonberries, 5- apples (harvesting for the winter - Gale). Some are sour, others are sweeter - choose according to your taste
In addition to cinnamon, I put in ground cloves.
Options: I made such a cake with two eggs - great, with less sugar - great, I put honey instead of sugar -.

Bake, taste, you will be amazed at the taste of RYE MUFFICK.
Bon Appetit.

It's great when there is a reason
Mandraik Ludmila
Svetochka, thank you very much for the cupcake and for the recipe! I liked it very much, delicious, tender and not at all wet, as happens with rye pastries. I will definitely take it into service!
$ vetLana
Mandraik Ludmila, ButtercupYour assessment is especially important, because you love rye flour and you know what it can do
Mandraik Ludmila
$ vetLana, Svetochka, I am very surprised, for the good, its texture is not rye at all, tender, rather fluffy, this is something extraordinary, I just could not imagine that rye flour could be like this in baked goods
$ vetLana

I just couldn't imagine that rye flour could be like this in baking
Exactly. I still wonder, although I've been baking it for a long time
What if you replace sugar? I haven't tried it myself, but if the taste does not deteriorate, then this is a diabetic recipe for those who cannot gluten - a great recipe
Mandraik Ludmila
Quote: $ vetLana
this is a diabetic recipe - a cool recipe
Exactly, I also think about it Svetochka, and this muffin that I am eating now, is it this portion or a double one?
$ vetLana
This muffin (which you eat) is made from 150 grams of flour. I always bake like that.For Fili, just such a volume is suitable. That's what I need
Mandraik Ludmila
It is clear, I will bake in radish-01, so that means such proportions as the recipe will be just - I have a smaller bowl

It still depends on the filling. I rested against the lid with an apple

Yes, I have already noticed that an apple is a "thermo-vigorous" ingredient, so now I try to add it to rye bread.

Svetochka, and vegetable oil 50g is all for lubrication, or is it necessary in the dough, and if in the dough, when? I didn't see something
$ vetLana
Luda, into the dough. When you put in flour. A drop is needed for lubrication

Exactly, I didn't write in the recipe when to put it
Mandraik Ludmila
Svetik, click on! in the recipe and write to the chef with a request for correction
$ vetLana
Lyudochka, OK.
Mandraik Ludmila
Svetochka, and the egg-buttered-rye part, still without proteins, I got it like a crumb, is this normal?
$ vetLana
Did you do everything according to the recipe?

Whipped with what?

Add a little oil if dry crumb is obtained.
Mandraik Ludmila
Oh, what I didn’t beat, and with knives in a bowl from a blendra, and in HP on dumplings, and a silicone spatula manually - not a fig, okay, I’ve already mixed everything and already put it in the cartoon. Perhaps the fact is that one yolk broke so that in order not to let it go into the proteins, I got some protein into the yolks. Okay, let's see

Svetik, everything worked out!
Rye Cupcake For Buttercup
The photo is not very clear, there is not enough lighting, but what is light is rhubarb. It can be seen that the cupcake has risen not badly. The taste is wonderful. Soft, sweetness is exactly what you need, sets off the acid of jealousy. In general, I will repeat, very pleasant, "unbeaten" taste
mamusi
Ahaaaa! I come in in the morning, and here they are "playing with buns"
I will also bake such a Cupcake today. Well done, Sveta, that she laid out the recipe. Thank you, I also follow rye recipes ...

Why should the Chef reap? If the recipe is new, Sveta's "Edit" button still works for 3 days. You yourself rule and that's it.

$ vetLana, aaaaa, I see that it is not new, but May Day, sorry. I was not there then

You put the rhubarb without starch?

Ritochka, this is the recipe you know. Do you remember the Rye Apple Pie? We baked it. I slightly changed the recipe and technology.

Girls, speaking about rye flour and products made from them. A mammologist once advised me to give up wheat and switch to rye. It's 100% hard to do. But I keep this advice in my head

Mandraik Ludmila
I didn't roll the rhubarb, put it right there. It was distributed normally, did not settle to the bottom, it turned out very tasty, next time I will put more, now I put 1.5 long stems
$ vetLana
Quote: Mandraik Lyudmila
1.5 long
Thanks for the clarification
Mandraik Ludmila
Svetochka, something "tells" me that if the eggs are beaten without dividing into yolks and whites, but there will be no difference with sugar, I will do so next time
Ritochka, very tasty muffin, if you don't know what rye is, you might not even understand
$ vetLana
Luda, look under the recipe in the comments, I wrote that when I do it myself, I beat the eggs without sharing. The taste does not change, but a less voluminous cake is obtained

And for you I made a more festive version
Mandraik Ludmila
Sveta, I read it but forgot. And have you tried it without oil? The same rye charlotte turns out
$ vetLana
Lyuda, I haven't tried it. The original recipe contains 100 gr. creamy. I put 50 g grows.
Mandraik Ludmila
I will experiment I, after all, last night, as I remembered about the cupcake, immediately went to the garden for rhubarb, it's good to live in the village
$ vetLana
Quote: Mandraik Ludmila
I will experiment
Come on,. You also wanted to make curd cream.

As it is, there is nothing while I'm here trying not to eat flour, we will consider rye - not flour And the cream is in the cake ...

And I baked with half-dried-frozen plum. Plum notable!)
It's worth getting cold. I'll post the photo later. When we cut.

Yes, someone has a plum, and someone has rhubarb. Today I read Temki. Some do not know what to do with cherries. I haven't eaten it yet this year. This is what the northern city means.

Svetul, we are already eating her !!!)))) and we fed our daughter :-) today we look - all of the little one’s cheeks are suspiciously pink
All. We began to freeze the cherries.

Sveta, with pictures of an ambush, troubles with my phone (I washed it with baby clothes))). They took off the son of Keksik on the phone. And I forgot to transfer the photo to me. I'll write to him tomorrow ...

In the meantime, I'll write my impressions. Loved your adaptation of that Apple Pie. I love him too. I took, though 2 eggs + 70 g. oils.
Spice cinnamon + cardamom + ginger. The aroma stood, you swing!
Baking in Panasik -10 60 minutes. This is a bit too much. I'll put it at 50. I'll look.
Mandraik Ludmila
Ah-ah-ah, I want cherries, I love her so much, and you often buy from us, and she is grass with grass And I also remember in the Crimea, as a child, sweet cherries, large, sweet

This is how women do not have enough hands, you carry everything together in an armful. My daughter says: "Mom, I understand now - women need 4 hands!"

I baked with rhubarb. I decided to make it according to the recipe: separate proteins and yolks (I wanted to see what consistency I get). The mass with the yolks turned out to be rather oily flour, but not crumbs or lumps.
I put 80 gr. sugar, but for my taste, you could put less.
I smeared half of the cake with yogurt. It turned out "a la cake"

Svetochka, did you make a single or one and a half portion?
$ vetLana
Single. Filya is small.
Mandraik Ludmila
So I have the same little redya. You have a pretty tall cupcake!
And I made a "charlotte", beat 3 eggs with a mixer for a long time, with 70g of sugar. Then she poured 140g of rye flour and very carefully mixed in, added 2 chopped large stalks of rhubarb and it turned out:
Rye Cupcake For Buttercup
So you can do it without oil and soda. The husband spoke out against soda last time
