Note

I really wanted to bake a ciabatta in a bread maker (I don't have an oven) ...
I used a recipe from a friendly site 🔗 with some changes and got a wonderful bread! It's so delicious that I wanted to share it with everyone.

I have a raisin sourdough on rye flour.
Mashed Potatoes - Simply crush potatoes without salt and water.
Water can be replaced with kefir or potato broth.

Super bread! I liked it, but I probably could not stand the time, it was already 12 at night and I did not wait for a full rise

Try it, I like it too

I decided to try your recipe. My dough turned out to be liquid, no hint of a bun - is that how it should be? There is no result yet and it looks like it will not be very much I left home for 2 hours, the dough slowly but surely began to rise to leave ... and when I came, I saw that everything had settled by 2 cm (that is, the walls of the bucket in the dough, the dough itself is 2 cm lower) Now I'll turn on the bake, I'll see what happens
-----------------------------------
baked, after all, there was too much liquid, or maybe the peroxide was strong ... in general, low and wet inside ... I think maybe I'm making the leaven too thin, because in the second recipe, a batter is obtained. Let's seek the truth

Li-li-i, there should still be a bun, not as steep as a wheat one, but still. This is the same ciabatta in HP, if it is very liquid, the lid will fall off! And to make the dough rise faster, you can add a little yeast.
Lily
so I still need to cook the leaven thicker, otherwise it’s thin. And I deliberately decided not to add yeast, I want to learn how to make only sourdough

tell me, if I mix half-and-half premium flour with whole grain will it turn out to be 1 grade of flour? Am I confusing it ... We do not sell flour of 1, 2 grades :-( but there is whole grain (I ordered it on the Internet).
danuca
eh, I'll try to bake tomorrow!
danuca
baked! however, I didn’t come out with a ciabatta, but the bread turned out to be delicious :-)

Tell me, is your starter 100%?
Or a different water / flour ratio?
I have a rye p / f from Vicki, I want to cook on it, can it work?
Newbie
