Zucchini, young 1 PC.
Water (broth) ~ 600 ml
Salt, black pepper taste
Italian herbs, dry taste
Olive oil 1 tbsp. l.

Cooking method

  • Cooking option 1 - long:

  • Pour in Italian herbs (~ 1/4 tsp), salt and pepper to taste. Turn on the soup cooker on SOUP-PUREE mode.
  • Serve the ready-made puree soup garnished with zucchini chips and rye bread croutons

Cooking option 2 - shortened: place the chopped vegetables in the bowl of the soup cooker, add lentils, water, spices and turn on the SOUP-PUREE mode.
But when cooking puree soups, I must fry onions (no matter which I use: onions, leeks, shallots) and carrots. It seems to me that it tastes better at times. Other vegetables, such as celery, zucchini, eggplant, pumpkin, bell peppers, etc., do not need to be fried. Although I can fry them in my mood. Fans of mashed soups, I hope this option will also be to their taste.

Option 3 - on the slab: in a saucepan (preferably with a thick bottom), fry the chopped leeks and carrots in olive oil until the carrots are soft. Add zucchini cubes and lentils to a saucepan. Pour with water (broth), it is better hot and cook until lentils are ready (depending on the variety, 7-15 minutes after boiling). Season with salt, pepper and add Italian herbs 3-5 minutes until tender. Beat the finished soup with an immersion blender (or pouring into a stationary) until a smooth, homogeneous consistency. The amount of liquid, when cooking on the stove, will need more than when cooking in a soup cooker. But the thickness can be adjusted after cooking and grinding with hot water, broth or even cream. In this case, after adding the liquid, it will be necessary to return the soup to the stove and warm up for 2-3 minutes.

1 cup red lentils
1.5-2 cups water or vegetable broth
