Lima beans with turkey in a creamy sauce

Ingredients

Lima beans (dry) 450 g
Turkey drumstick or thigh fillet 600 g
Onions (large heads) 3 pcs.
Cherry tomatoes (option) 250 g
Cream 10% 150 ml
A pinch of turmeric, fresh herbs and 0.5 tsp. dry garlic
Deep saucepan, 3 l

Cooking method

  • First of all, you need to boil the beans. Lima does not require soaking. I used to leave it in cool water all night, then rinse it and cook it in fresh water for 45-50 minutes. But this time she changed her mind and after 10 minutes of soaking, she set to cook. She was completely ready in an hour and fifteen. About an hour after the start of cooking, I added salt - 1 tsp.
  • My lima stood in the cooling broth for several hours before my hands reached her. So, it can be cooked in advance and used as needed, nothing will be done with it.
  • Lima beans with turkey in a creamy sauceCut the turkey into pieces of about three centimeters and fry over high heat until golden brown in two or three tbsp. tablespoons of vegetable oil.
  • Lima beans with turkey in a creamy sauceAdd onion coarsely chopped into quartet rings to the meat and, covering the saucepan with a lid, fry and simmer for 3 minutes, stirring occasionally. Thanks to the high heat, the onion under the lid is both fried and steamed at the same time, which significantly reduces the cooking time. Do not fry the onion too much! It should only turn a pale golden color, otherwise the color of the sauce will be too dark (I overexposed it a bit while photographing). After the time has elapsed, put the whole cherry tomatoes into the stewpan and heat under the lid for another two minutes, no more so that the tomatoes do not ferment. They should remain almost fresh.
  • Lima beans with turkey in a creamy sauceThrow the beans into a colander set on a bowl or saucepan (we need the broth), then put the lima into a saucepan and pour the broth in the amount you need. Don't be guided by me, I like to have a lot of sauce, so I pour the lima almost "shoulder-deep"))) Now we salt and pepper the whole thing and add 1/3 tsp. turmeric (for color). Since, due to the overcooked onions, my broth turned out to be darkish, this time I did not add turmeric, being afraid to make the dish ugly yellow-brown, but should be deliciously light sunny. Oh how!)))
  • Lima beans with turkey in a creamy sauceWhile we were salt-pepper-curcum-tasting-tasted, the contents of the saucepan boiled. Now add the cream, bring it to a boil again and turn off the heat. Add dry garlic and chopped herbs. But the greens can be left for later, to decorate the finished dish on the plate. Mix everything, cover with a lid and leave for fifteen to twenty minutes to rest and get some taste.
  • Have you seen how much sauce I make? Horror! But I love it, so on my plate it usually looks more like soup. It was I just for the photo shoot that I designed everything culturally, but then, while no one sees, I filled all the beauty with sauce and chuckled, smacking my lips.)))
  • Actually, that's all. Our dish is ready. I cooked it without tomatoes. She threw greens along with garlic.
  • The taste turns out to be indescribable: sweetish onion, soft, creamy beans and slightly fried turkey, and gravyaa is finally something with something! So tender, enveloping and very, very non-greasy.

Unfortunately (or fortunately, anyone else), lima is sold with a lot of cracked beans, which, when cooked, fall apart and turn almost into a puree. My husband sees this as a plus, and I - as a minus. Therefore, whole beautiful beans go to my portion, and to my husband - a kind of bean and onion puree with meat. And everyone is happy.
I am writing about this just as a warning so that you do not get upset ahead of time, as I once did when I saw substandard beans. There are usually a lot of them, so just accept it.
