Lean beet cream soup

Ingredients

boiled or baked peeled beets 250 g
leaf celery 6 vet.
red onion 1 PC.
coconut milk 200 ml.
water or vegetable broth 200 ml.
vegetable oil 1 tbsp. l.
lime or lemon juice taste
garlic 2 tooth.
soy sauce optional 1 tbsp. l.
salt taste

Cooking method

  • Lean beet cream soupBake or boil the beets. Clean.
    Lean beet cream soupDice the onion. If you have stalked celery, then cut a couple of stalks. I don't have it, so I just cut the stems.

  • If using soy sauce, pour in and keep with it on the fire for 2-3 minutes, stirring occasionally. Skip this step if you do not use the sauce and bring the onion and celery until soft.

    Lean beet cream soupCoconut milk. Bring to a boil, reduce heat. Cover and cook for 7-10 minutes.

    Lean beet cream soupPurée. To taste. Salt. Pour back into the pot and bring to a boil. We need to warm up the soup along with the beets.

For some time now I began to cook beets in a micr. My beets, put in a glass pan and for 8-12 minutes in a micra. Then I cool the beets right in the pan at room temperature.
So, Angela, my beets are getting cold. The cooking time depends on the size of the beets.
