Ingredients

Flour 2 cups
Oat flakes (rolled oats) 1 cup
Brown sugar 1/3 cup
Soda 1 tsp
baking powder 1/2 tsp
Salt 1 tsp
Cold sl. oil,

Cooking method

  • Preheat oven to 180 ° C / 350 ° F.
  • Grease a baking sheet with vegetable oil.
  • Whisk dry ingredients (from flour to salt) in a large bowl. Add cold chunks of butter and chop with a knife into small pea-sized crumbs (or rub butter and flour with your fingers).
  • Add raisins, nuts and stir. Add kefir to flour, mix with a fork (the dough will be slightly sticky).
  • Put the dough on a floured table, knead a little until dry flour disappears and form a round loaf 15 cm in diameter; put the loaf on a baking sheet.
  • Using a strainer, sprinkle the bread with flour (1 tsp). Make shallow cuts in the bread with a knife (2 cm deep, 10 cm long) in the shape of a cross.
  • Bake for 50-60 minutes, or until tender. (the crust of the bread should be dry and hard, but it will soften as it cools).
  • Cool the bread on the wire rack.
  • The bread can be frozen whole (defrosting without taking it out of the bag) or by cutting it into portions (reheat the pieces in a micro).
  • I practically eliminated the sugar, leaving only 1 tsp. and did not add raisins or nuts. Baked in MV 65 + 20 minutes.

After the main 65 minutes of baking, I kept the bread for another 18 minutes on the baking, and after the smell of fried, I transferred the cartoon to the heating mode for another ten minutes. In the meantime, I laid out the bread to cool, what happened I will find out tomorrow morning.
But the smell when baking is certainly amazing, my family came running to my culinary holiday, they thought that I was baking some kind of cake.

I liked the taste, but I would rather like a store-bought taste. I don't really like the bread that is sold in all retail chains, the only black bread that I like is our Zhukovsky bread. There are outlets in Moscow selling our bread, so people, having eaten our bread, quickly buy it up, and other bread is left to last.
It is not entirely clear why store-bought bread is much lighter than one made from rye flour with one's own hands, probably rye bread is baked with the addition of wheat flour. I measured all the ingredients with a cartoon cup of 160 g, and salt, sugar, and baking powder with a small spoon, which in the end probably became more than necessary, because you measure everything with a glass of 250 g. Bread is eaten, next time I'll try another version of soda bread. Only there you have 65 minutes of baking + 20 minutes of heating, in short I will experiment. To the family, this bread reminded more of something like baking for tea than bread for soup. But this is rather my mistake at some stage in the preparation itself.
