Ingredients

Peeled rye flour 300 g
Wheat flour 180 g
Amaranth flour 50 g
Flaxseed flour 20 g
Salt 1.5 tsp.
Honey (molasses, sugar) 40 g
Rye malt 40 g
Water 330 g + 80 g
Flax seed optional
Coriander grain 1 tsp
Dry fast-acting yeast 2 tsp

Cooking method

  • Brew the malt with 80 grams of boiling water and cool. Crind the corindr seeds a little. I did it in a stone mortar.
  • Put all the components in the HP according to the instructions for your HP. Mix all types of flour before laying.

Ira, you have wonderful bread! I would like to repeat, but I have never met amaranth flour with us. I can't even imagine its taste. There is no problem with flaxseed flour, there is both flour and flaxseed crops. But can you replace amaranth with something?

Guzel on whole grain is possible. I often bake with her too. But according to the programs in HP, I do not know what to change.

I baked this bread !!!
Instead of water, I put whey, instead of wheat flour, CH and + oat bran (the rest according to the recipe: rye, amaranth, flaxseed), yeast - not dry, but fresh 20 gr. baked in HP on the Basic program.
Everything worked out! Not tall, the dough is heavy, but the bun is excellent and elastic! Although at the first kneading she helped to knead with her hands (she pulled it straight out and crumpled in her hands). then HP managed it herself.

I didn’t find amaranth flour with us, but I did find amaranth seeds at the bazaar; they sell them for glasses, for only 10 UAH a glass. A sample was taken and ground in a coffee grinder. The rest tried everything according to the recipe. The only thing is that I don't have flax flour either, I replaced it with linseed carvings, and the seed. And a little more sesame seed sprinkled.
But there was a problem with batching. My HP Kenwood is dead, I used her dough for dumplings, and minced meat enda sausage. Now she's the main thing for me, she doesn't pull out the tough dough.And I did not think that the dough was more rye, and began to measure in hp. So she went on strike. I had to put the dough in the mixing bowl and exchange there. Then she returned the dough to the bucket and baked it for 1 hour in HP.
