At the first stage, the potatoes should already be quite soft, otherwise you will not crush them. And the softness of "present" potatoes depends on many reasons: what quality it is, for example; its size, its grade (one takes longer to cook, the other faster). And foil is needed just to speed up the cooking process.

I never bothered about this topic at all - this is a controversial issue about the sides of the foil ... I, too, have some of the potatoes wrapped inside with a matte side, but they were also shiny.
