Stir-fried pumpkin soup with curry

Fried Pumpkin Curry Soup

Ingredients

Pumpkin (honey varieties *) 500-600 g
Leek 1/2 stem
Carrots (medium size) 1 PC.
Curry (ground) 0.5-1 tsp
Vegetable oil 1 tbsp. l.
Salt, black pepper by bite
Water (boiling water) ~ 200 ml
For filing:
Pumpkin seeds, croutons, or breadsticks

Cooking method

  • Fried Pumpkin Curry SoupPeel the leeks and carrots. Cut into thin half-rings and fry in a deep frying pan (saucepan) in vegetable oil until the carrots are soft.
  • Fried Pumpkin Curry SoupAdd the pumpkin, cut into thin slices (you can grate on a coarse grater), to the vegetables.
  • Fried Pumpkin Curry SoupFry the pumpkin until it is transparent. The knife will enter a piece of finished pumpkin easily without obstacles.

Note

* Honey pumpkin varieties are pumpkins with a characteristic honey flavor, juicy and sweet, and rather soft (not oaky) pulp. It is this pumpkin that I recommend using for fried puree soup. If you just cook it, you get a very sweet, even sugary soup. And during frying, the sugars in the pulp are caramelized and completely transformed in taste.

** After adding cream, the soup will need to be warmed up, but not boiled.

Ksenia, I often make homemade puree soup completely different, they love it, but pumpkin soup somehow still doesn’t, although I heard that it’s delicious.
I read the recipes, made on the basis of this, only fried in ghee and ordinary onions. Added turmeric and nutmeg. Sprinkle with cheese when serving. Oh, and delicious !!! Both children ate a plate
I definitely add this soup to the family menu. Simple and delicious. Fragrant!
