Jamie Oliver's Lamb Roast with Slight Deviations

Ingredients

Leg of lamb 1.5KG
garlic 1 head
lemon zest 0.5 lemon
salt pepper taste
potatoes taste
carrot taste
stalk celery taste
fresh or dry rosemary 0.5 tsp dry
olive oil 1 tbsp. l.
mint sauce
fresh mint (4 tablespoons), I have dry 1 tbsp. l.
hot water for brewing mint 2 tbsp. l.
granulated sugar (I have brown) 1 tsp
wine vinegar (I have apple cider) 2 tbsp. l.

Cooking method

  • Season with salt, pepper, coat with crushed garlic (2-3 cloves) and lemon zest (half a lemon).
  • Boil potatoes and carrots for 10 minutes. Fold into a baking dish, salt and pepper, add the cloves of unpeeled garlic (head), rosemary (I have dry), 1 tbsp. a spoonful of olive oil and two stalks of celery. Celery and carrots are my gag. Celery had to be put in more, it turned out very tasty)). Put in an oven preheated to 200 degrees on the lower level, set a grate on top and put a leg of lamb on it)). More or less like this:

  • Lamb juices will irrigate vegetables)))
  • The total roasting time is 1 hour 30 minutes in the "top-bottom" mode, without convection. The temperature for the first 10 minutes is 200 degrees, then - 180 degrees.
  • After an hour and a half, take it out of the oven, cover it with foil and let it rest for 15 minutes.
  • Serve with mint sauce. Unfortunately, I did not buy fresh mint on time, I had to use dry, but own drying))).
  • About 1 tablespoon of mint, chopped by hand, poured 2 tbsp. l. boiling water, let it brew for 15 minutes, added 1 tsp. brown sugar, a pinch of salt and 2 tbsp. l. apple cider vinegar (wine vinegar recipe).
  • Quite a good sauce, according to my taste sensations. Perfectly set off the taste of mutton, but it turned out to be the most delicate, it just melts in the mouth, the specific smell of mutton has disappeared somewhere))). In a word, it turned out yummy !!!
