Ingredients

Bulgarian pepper 8 pieces
Eggplant (I take zucchini) 4 medium
Bulb 2 large
Tomato juice (I put the tomatoes through a blender and boil it a little, you can dilute the tomato paste with water) 2 liters
Ground red pepper 1 teaspoon
Ground black pepper 1 teaspoon
Sugar 1 glass
Salt 1 tablespoon
Vegetable oil 3 tablespoons
Essence 70% 1 teaspoon

Cooking method

  • Prepared eggplants (in my case, zucchini) and pepper cut into strips, onion in half rings, put vegetables in an enamel pan and pour juice, put on the stove, bring to a boil and cook for 20 minutes, add spices, salt, sugar, oil and essence, cook more 10 minutes. Put the finished appetizer in prepared jars and roll up the lids and store in a cool dry place. If you don't like the spiciness, reduce the pepper to 0.5 tsp.

Irina, I can't say, I don't do it in such small volumes. I cook a twenty-liter pot at a time. Rinse cans 10 x 0.5. 2 liters of juice + vegetables = 4-5 liters somewhere. I tried it about five years ago and now I don't remember how much it turns out
