Small Dutch pancakes "Poffertjes"

Ingredients

Wheat flour 100 g
Buckwheat flour 200 g
Dry yeast 10 g
Eggs 2 pcs.
Granulated sugar 30 g
Milk 300-350 ml
For serving butter and icing sugar taste
For frying butter and vegetable oil on demand
Salt 0.5 tsp

Cooking method

  • Pancake restaurants are especially popular in the Netherlands.
  • In them you can find special pancakes under 25 cm in diameter for "Pannenkoeken" fillings (I also plan to introduce you to them), and small Dutch pancakes "Poffertjes", which are cooked in a special frying pan with small indentations. But it's okay if you don't have one, in a regular cast-iron frying pan or in a frying pan with a non-stick coating, pancakes turn out to be no worse. They need to be baked small in size, so spread the dough with a teaspoon. Lush and incredibly touching, they are traditionally served with powdered sugar and a lump of butter.
  • I baked in a special skillet with a pattern and in a small pan for pancakes.
  • Small Dutch pancakes "Poffertjes"
  • Dissolve yeast in 50 ml of warm milk
  • Mix both types of flour, salt, sugar, milk with yeast, knead the dough as thick as pancakes. Correct the density with the amount of milk.
  • Tighten the bowl with plastic wrap and remove the dough in a warm place for an hour until the dough rises completely.
  • Bake pancakes in a mixture of butter and vegetable oil, without fanaticism, smearing the cells of the pan with a brush.
  • If the cells are small, then spread the dough with a teaspoon, so as not to be mistaken with the amount.
  • Coat the finished pancakes with melted butter and serve sprinkled with powdered sugar with your favorite additives.

These were a little sticky! Since I did not deviate from the recipe, I did not add oil to the dough. There is a lot of flour, for sure, the taste is very buckwheat! So I'm thinking of making my own flour from green buckwheat, the taste will change to a more neutral one. I baked cakes from brown and green buckwheat flour - earth and sky! Green is much tastier, especially if the product is confectionery.

Moreover, I even cook porridge from it. If it tastes bitter, then it is better not to use it, and the pancakes will also taste bitter. They are already so buckwheat in taste that not many people like it.

They should be small, and their shape is in the original, like a lentil grain or a flying saucer.
I baked twice, the first time the yeast was not so hot, and the dough turned out thinner, so I baked it in a pan with mugs. The second time I fried in a deeper frying pan, well, you can see it in the photo. So it turned out closer to the original in structure.
So the shape is crumpets and the rather thick dough is getting closer to real.
But in principle, you need to do everything to your taste, and the dough can be slightly diluted when kneading.
I am already puzzled to get a special frying pan.
